Peach Pork Picante

Reviewed: Jan. 8, 2014
One of my favorite quick and easy meals. I use chicken or pork for the meat and it turns out equally good. Also, apricot or preach preserves works perfectly. When browning the meat I find coconut oil gives it a wonder flavor. Served over brown rice and you have a healthy, delicious meal that everyone seems to enjoy! GreT recipe

I covered the entire chicken with the mayo mixture then the bread crumbs and turned the chicken 1/2 way thru cooking time. I served on a bed of spaghetti and covered with sauce. YUMMY

Cake Mix Cookies I

Reviewed: Dec. 31, 2011
I left out the chips, made 2 batches using spice cake mix for one and red velvet cake mix for the other since it was Christmas. Then I whipped up some cream cheese filling/frosting (2 cakes of cream cheese, 3 cups of confectioners sugar and 2 tsp of homemade rum vanilla) and piped the filling on one cookie and added another cookie on top. I made both batches and they were ready to walk out the door with me that afternoon for a party. The cookies were beautiful, very decadent and lasted much longer without drying out with the cream cheese to keep them moist. Next time I use the spice cake I will add 2 tsp of ginger to get that very Christmasy flavor. Yummy!!!

Chocolate Sandwich Cookies II

Reviewed: Oct. 30, 2011
Such a simple recipe with so MANY possibilities! I made awesome spider cookies for Halloween with dark chocolate cake mixes. I added orange to the cream filling, licorice for legs and decorator's frosting for eyes - orange, green and black. These are cookies best made on the small size because they are VERY rich and delicious but hard to eat the whole cookie if too large. Be sure to use parchment paper and they will come right up without any damage to the cookie. Thanks for a fabulous recipe!

Hershey's ® 'Perfectly Chocolate' Chocolate Cake

Reviewed: Jun. 20, 2011
This is by far the best chocolate cake I've ever eaten. My friend turned me onto this recipe that she found on the back of the Hershey's container. My family loves it but refuses to let me frost them ever again. They say it is so moist and good they don't want the frosting to ruin the cake. Make it exactly as it calls for and be careful not to OVER FILL! Never more that 2/3's maximum in the pan.

Blackened Salmon Fillets

Reviewed: May 1, 2011
I always hate to give a low rating because I wonder if it were something I did wrong or just have a different expectation. However, I had to open my windows overnight.... My son, his girlfriend and I all started coughing and the air lingered. We hoped this meant a real special taste. Unfortunately the only taste was pepper. : (

World's Best Lasagna

Reviewed: Apr. 5, 2011
OH MY! This was fabulous. I always thought I had the best Lasagna recipe in the world until I tried this one. Now I really do have the best recipe!!! The only changes I made was to double the ricotta cheese (and egg), use a full pound of ground beef, and use fresh basil rather than dried. Also, I didn't cook my noodles but assembled the lasagna the night before and let it set in the frig. Then I baked in covered in the oven for 1 hour at 375 degrees and uncovered for 15 minutes. After letting it set for 15 minutes out of the oven I cut it to find a perfect lasagna. This was incredible. The only problem was who got the last piece. Thanks for a truly great recipe.

Cookie Tulips

Reviewed: Apr. 2, 2011
I rated this a 4 because of some concerns with the recipe. I wasn't sure how much to beat the eggs. I actually beat them just as I would for an omelet. Also, the only cookie I had that held it's shape was one I "over cooked" just a bit - not burned but a little brown all over. I only got about 7 "tulips" but they were delicious. We just slapped on some of the filling and dug in. The taste was fabulous and the presentation was beautiful for the one cookie that worked for us.

Easy Caramelized Onion Pork Chops

Reviewed: Feb. 25, 2011
Very tender and would have been wonderful if I had used less salt than called for. Next time I will only use a maximum of 2 tsp of salt and add an extra onion. The onions were wonderful!! Also, as others have stated the last cooking time should be UN-covered so that the liquid can evaporate. I realized this after cooking for about 10 minutes covered. I removed the lid at that time and it turned out beautifully. Great presentation, very tender and delicious!

Dumpling Soup

Reviewed: Dec. 31, 2010
I'm sure this came out the way it was suppose to but my family did not like it. I gave it 3 starts because if this is the type of soup you like it's OK and the dumplins were fabulous. Next time I'll make chicken instead of potatoes.

I added 4 Tbsp of Coffee Kalhua to the crust and 8 Tbsp to the filling. Otherwise, this was fabulous! The best of both desserts!

Chocolate Covered Cherry Cookies II

Reviewed: Apr. 4, 2010
I always follow a recipe exactly the first time I make it and then adjust. I thought the flavor was great. However, as I was making these I was concerned there was too much flour and indeed they came out dry. I will definitely make these again but with less flour. 1 cup to possibly 1 1/4 cup flour would be more than enough for the amount of butter and eggs. Like others said I will probably add more cherry flavoring. Otherwise, this is a great new recipe. Thanks!

Molasses Sugar Cookies

Reviewed: Feb. 9, 2010
OMG! These were wonderful! The only change I'll make next time is 50/50 butter/shortening, 50/50 white/brown sugar and an additional 1/4 cup of molasses. I really love the taste of molasses so I used dark or robust unsulfured molasses. Thank you for such a great taste!

I have been making this for several years and it is wonderful! Be sure to take the time to use fresh orange zest and not dried orange peal - much better! I make this and can it so that we can have great sauce throughout the year. WONDERFUL!

Tiramisu II

Reviewed: Oct. 31, 2009
Awesome! I made it just as the recipe was written. EXCEPT I folded the whipped cream into the mascarpone cheese mixture and then layered that with the lady fingers. TOO DIE FOR! Even my daughter who doesn't like Tiramisu loved it. Thanks for a great recipe.

Absolutely Ultimate Potato Soup

Reviewed: Oct. 26, 2009
Awesome! Thank you for a perfect, easy to make soup. What a great meal on a cool, fall day. Update: My son is home for Christmas and asked me to make this for him while he was home. This has become his very favorite meal. Over the months I have been making this I've realized that mine is too thick so I add an extra cup or two of either cream or milk. Perfect name for a perfect soup! Thanks!
