Easy Mashed Potato and Roasted Vegetable Enchiladas

Great recipe! I made my own enchilada sauce, substituted "cheddar" cauliflower for the carrots, and made mashed potatoes from scratch (not the flakes). A mix of Daiya pepper jack and mozzerella cheeses made this vegan delight!

Asian Stir Fry Sauce

This sauce really perked up our normally bland tempeh stir fry. I agree with one of the other reviews who said this was a little too thick so next time I'll likely cut back on the cornstarch. We made the following substitutions if anyone is interested: madeira for dry sherry, brown rice vinegar for rice vinegar, a few healthy shakes of powdered ginger instead of fresh ginger. Thanks!

Baked Delicata Squash with Lime Butter

I was pretty disappointed with this based on the stellar reviews it was getting. I veganized this by substituting margarine for butter which might have thrown things off a bit. I had to really mash it up with the squash to get it to taste decent. Surprisingly enough, adding some brown sugar to the mix greatly improved things; I'd recommend doing this if you try it and find it not to your liking.

Stir Fried Kale

Great way to use up some kale. I made the following modifications (adapted, in part, by other reviewers' suggestions): cooked garlic and onions, put in the kale and a few splashes of soy sauce, steamed until I thought it was good enough, then mixed in some breadcrumbs and some (vegan) bacon bits. Thanks for sharing!

Runzas (meat pies)

We've made this recipe (albeit, veganized) three times so far and it keeps getting better each time. The first time, we were lazy and used crescent rolls instead of making the dough. The filling was good but the crescents didn't do it justice. Next, I used a pastry dough recipe (from making cornish pasties) and they were quite tasty. I finally decided to take the time to make the dough specified here and WOW, was it fantastic. The dough may have been a little too good though: my wife now wants me to make it but turn it into dinner rolls :) The recipe is fairly easy to make vegan. Just use Yves or Lightlife veggie ground round and substitute a mixture of 6 Tbsp ground flaxseed and 2 Tbsp for the eggs and its magificent. It's a great way to use up the cabbage we keep getting from our CSA. Thanks for the recipe!

Sweet and Savory Kale

This was quite a unique dish but my wife and I weren't "gaga" over it. I thought the apple cider vinegar taste was a bit too pronounced but my wife disagreed. Although it was pretty easy to fix, I'm not sure we'll try it again.

Chocolate Zucchini Cake I

I veganized this by replacing milk with soymilk, butter with margarine, and eggs with flaxseed/water. I was out of walnuts so I increased the amount of choco chips and used only them on top. The cake turned out well. I felt like the cinnamon/cloves were the defining characteristic though, not the zucchini. My wife also like it so I guess you could say "omni tested, vegan approved!" Thanks for the recipe.

Classic Waffles

These turned out very nicely for us. I veganized them by using soy milk (in place of cow's milk) and flaxseed/water mix (in place of the eggs). I also made them a bit lower fat (maybe even fat free!) by using applesauce (blueberry applesauce to be exact) in place of the melted butter. This is definitely going to be our go-to recipe for waffles from now on. Thanks!

Black Bean and Corn Quesadillas

This was a big hit with my wife and me. I veganized mine by using margarine in place of butter and using Follow Your Heart Vegan Monterey Jack. I forgot the red pepper flakes but they were tasty none-the-less. Thanks so much for this great recipe; I'm sure it will become a regular for us.
