Sausage Casserole

So even with the mistakes I made (forgot the cottage cheese, forgot to add the onion), this is fantastic! I didn't peel the potatoes either. I just grabbed my box grater and had fun. It took about 3 potatoes and was about 4 cups. I added more eggs because I didn't buy jumbo. Can't wait to make it the right way for New Year's brunch!

Gourmet Sweet Potato Classic

I reduced the sugar to a little over 1/4 c and this was sweet enough. My husband actually said it was too sweet. The kids and I loved it! Made the sweet potatoes the day before, reheated in the microwave just enough to mash, tossed together and into the oven. Definitely a keeper!!

Roasted Pork Loin

I tripled the garlic, used 1.5 T of rosemary because I had a 4 3/4lb roast. I didn't have white wine and debated going back to the store to get it but didn't. I threw this together, rubbed the top with remaining paste mixture then tossed it in the frig to hang out for about 4 hours. I covered mine with foil and let it cook on 325 (hubby set the temp wrong - ACK!!) for about 2.75 hours. It was perfect. My son even commented "Mom, why is this so good???"

Gelatin Poke Cake

Ahhhhhh, reminds me of my grammy's "jello" cake! She used a yellow cake mix baked as directed. Once cooled, poke holes throughout the cake with the back of a wooden spoon. Make the jello as directed then pour over the cake. (She always used cherry jello). I don't remember if she let the jello set before topping. I don't and it sets just fine in the frig. For the "icing" -she'd make pistachio pudding with 1 package of dream whip added in then make as directed on pudding box. When the pudding was ready, she'd "slather" on top of the cake then refrigerate. This was my 2nd most requested food item (the first being her peach cobbler). I hovered around the frig until time to get it out. LOL I've made a few times for my kids but they don't care much for it. I've used various flavors of jello but prefer cherry / pistachio combo - just like Grammy made.

Salsa Chicken Burrito Filling

I saw this recipe, made my list and off to the market I went. Of course, I forgot something - tomato sauce! Didn't realize it until I got home. Rather than go back, I opened up a can of tomato paste, mixed it with water and used it. Still 5 stars! I didn't care for the cumin, thought it overpowered it so when I make it again today with the tomato sauce this time, I'm leaving it out. Also going to use Taco Seasoning I rather than buying it. I used my crock pot and frozen chicken breasts as others posted in their reviews. I was skeptical about using frozen chicken but it was really good. A bit watery but good. I doubled the recipe last time and toted the leftovers to work for lunch and used them in another meal. Thanks for the recipe JUBEEFISH!!

Burgundy Pork Tenderloin

I've done this in the slow cooker and it's yummy. much like a tenderloin slow cooker recipe with more wine though. I did use less wine.

Chicken and Dumplings III

This was ok. I used bone in, skin on chicken thighs and cooked them in low sodium chicken stock and enough water to cover them. I added salt, bay leaf, garlic sea salt, pepper to that. Maybe needs more pepper. I used 2 cans cream of chicken soup, 1 can cream of celery. Added frozen peas & carrots just before dropping the dumplings in. Definitely will make again.

Garlic Chicken Fried Chicken

I have made this several times and love it. It's quick if you pound the breasts thin (put them in a ziploc bag and take out some aggression with a pan ... LOL ) and easy. My kids love it, too. I go heavy on the pepper and garlic. Thanks for a great recipe.

No Bake Cookies III

I followed the recommendation of others and reduced the sugar to 1 1/2 cups, boiled longer and 2 hours later, they still haven't set. Don't think I'll try this one again.

Hungarian Goulash I

My first attempt and I loved it. Definitely a keeper! My kids didn't but what do they know, they're kids! LOL The only change I made was I used beef stock instead of the water and I floured the beef before I browned it. I had to use a little more stock because I found the sauce too thick but oh my goodness. Well worth the time for this one!

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

The port wine sauce took a little of the "bite" out of the bleu cheese which was perfect. I didn't have panko bread crumbs so I used regular ones. My skillet isn't oven safe so I just wrapped the handle in a couple layers of aluminum foil. When I put it under the broiler, I kept as much of the handle away from the direct heat as possible and it was fine. Husband loved it and has asked for it again already and I just made it 2 days ago!

Strawberry Spinach Salad I

My husband's comments: "I don't usually like fruit in my salads but this is really good." 10 stars for that!! lol The dressing was simple, quick and easy. It was a little on the sweet side so next time, I'll cut the sugar by half or just use splenda. The hardest thing was mincing the onion so I cheated and used my grater. I forgot almonds at the grocery so I toasted sesame seeds and put those on the salad too. Yum, yum, yum. Can't wait to take another reader's advice and try it with other berries. My kids didn't care for it but to them, McD's is a gourmet meal. :)

Seafood Stuffed Avocados

I added the avocado also and didn't use the shell. I served it on lettuce leaves. It was an interesting dish but I thought it was a bit bland. Maybe I didn't add enough pepper or I just prefer things with alot of pepper. I'm not sure. I didn't use cucumber so perhaps that's why. Next time, I'll cut back on the mayo and add more fresh ground pepper and perhaps a little cayenne. Overall, it was good, quick and easy. I threw it together in under 5 minutes which is a major plus for me.

kids didn't like them covered but they were very good and easy!! Didn't try the styrofoam trick but will next time. Turning over the colander and using that was a little trickier than I thought it would be.

Turkey Tetrazzini II

Very easy recipe. I didn't have spaghetti so I used penne. If you do that, make extra sauce. I also added a lot of cracked pepper. I took another reviewers suggestion of putting breadcrumbs on top. It was good. I'll make again.
