Honey Oatmeal Cookies

My husband can have only honey as a sweetener. I add an extra half cup of flour and use whole wheat flour to get what looks a lot like macaroons, and he loves them!

Cider Vinegar Chicken

Overdid the garlic a bit, because I misread the recipe to be for 4 half breasts. Also overdid the vinegar. As I was making it, I realized that the housemate really dislikes vinegar, so I cut the tang with a drizzle of honey on each breast. Despite being overly generous with the ingredients, the hubby loved it; the vinegar hating housemate will eat it if I make it again, which is actually high praise for something made with vinegar. I'd pay closer attention to amounts next time; definitely step back on the garlic, which I had doubled for 7 half breasts. It did create a lovely, tender chicken, and the honey did take some of the sharpness out if you have someone in your house not overly fond of vinegar.

Tangy Cranberry Sauce

My husband does not eat sugar, so I used honey for the sweetener. This was a terrific addition to our Thanksgiving dinner. Even my spice intolerant friend enjoyed the tang of the horseradish!

Gingerbread III

Hubby doesn't eat sugar, so I replaced the brown sugar and molasses with 3/4 honey. I also at least double the spices, because I like my food to bite back sometimes! It came out a bit light in color since I didn't use molasses, but was a hit, even cold the next day rather than served warm.

Garlic-Studded Roast Pork with Cider Sauce

Due to a need to simplify, I used garlic powder and thyme as the seasonings. I had a 5 lb roast, and used 1/3 cup cider vinegar and a cup of cider for the cooking liquid, which avoided knocking the family out of the house with the vinegar fumes. I made the sauce as directed and cooked to 145. Moist, flavoful, with just a hint of bite from the vinegar.

Kalua Pig in a Slow Cooker

My husband was quite impressed with this. Simple and easy to prepare. Tender and full of flavor. It is rather dry, though, so plan on adding barbecue sauce to the resulting pulled pork.

Creamy Lemon Cake

I didn't use the recommended frosting, but I suspect that Jell-O(r) poke cake is more interesting when the Jell-O is a different color and flavor than the cake. Otherwise, you just wind up with an extra moist, sweet, and sticky cake. Not for an adult palate.

Baron's Blackberry Cobbler

Simple and delicious! My husband can't eat white sugar, so I substituted 3/4 the amount of honey, and added the cornstarch and honey to the berries separately, and put the honey with the liquid ingredients in the batter. I think it was even better the next day; Hubby says it was amazing both ways. I prefer the cake-y topping on this to the usual more "biscuit-y" topping. Yay for berries on sale at the store for those of us without the ability to garden.
