Lentils and Rice with Fried Onions (Mujadarrah)

Reviewed: Aug. 11, 2011
It's amazing how good something so simple is! I use yogurt (although my husband prefers it without yogurt or sour cream) and extra onions. The onions are the best part.

Cajun Corn Soup

Reviewed: Jul. 26, 2011
AWESOME SOUP! I made only a few changes. I substituted water and vegetable Better Than Boullion for the chicken stock to make it vegetarian and left out the garlic salt. I used fresh garlic and prefer low-salt foods. Also I added all the ingredients and cooked through before blending, so I only had to blend it once. Less messy. Seriously one of the best soups I've tried in awhile. I'll definitely be making it again.

Pineapple Banana Bread

Reviewed: Jul. 9, 2011
5 stars with one change anyway, I substituted applesauce of all of that nasty oil. I might try using bigger chunks of pineapple next time, just to give it a little more pineapple flavor.

Vegetarian Meatloaf with Vegetables

Reviewed: Mar. 4, 2011
This was really good! I used Gimme Lean soysage and a bag of Boca burger crumbles. I used a clove of fresh pressed garlic instead of powdered and used my mother's meatloaf sauce instead of tomato sauce. It's basically ketchup, brown sugar and lemon juice. I also added mushrooms, which I put on top of the loaf before pouring the sauce over it.

Chili Potato Burritos

Reviewed: Mar. 2, 2011
Delicious! I made a couple of changes. I added a small container of sour cream to the potatoes, because they seemed dry. I used the entire can of enchilada sauce, and it could still probably have used more.

Spiced Hot Chocolate

Reviewed: Dec. 18, 2010
It has an awful aftertaste, like I just ate a spoonful of powdered spices.

Spicy Black Bean Empanadas

Reviewed: Sep. 20, 2010
I always have leftover filling, but that's great for sandwiches or over rice.

Working Mom's Hamentashen

Reviewed: Feb. 22, 2010
My kids are happily noshing on the first batch right now. They're delicious! I made only a couple of small changes. I had to add a little more water because the dough was too dry and flaky, and I used a little less filling than called for so it would be more manageable. We're very happy with the results.

Spicy Pakistani Zucchini

Reviewed: Dec. 5, 2009
Made a few minor changes: didn't peel or seed the zucchini, used canned tomatoes with juice instead of fresh tomatoes and water, and used a fresh pressed clove of garlic instead of powdered. I also added some yellow curry powder and cayenne pepper to spice it up a little.

Shepherd's Pie VI

Reviewed: Nov. 28, 2009
I added a clove of fresh pressed garlic to the potatoes. I also added nutmeg, cinnamon, red pepper flakes, worcestershire sauce and leeks to the "meat" (boca burger crumbles). Instead of mashing the carrots, I just sliced them, and added peas and corn to the carrot layer.

Zucchini Patties

Reviewed: Sep. 1, 2009
The taste was good, but the patties didn't stick together for me.

Addictive Sweet Potato Burritos

It could've been spicier for me, but that's easily remedied. Yummy and unique. A definite keeper.

California Grilled Veggie Sandwich

Reviewed: Jan. 26, 2009
Delicious! I think next time I'll use less garlic, though. Also, I made "closed-faced" and added some alfalfa sprouts when I assembled the sandwiches.

Vegetable Cheese Soup I

Reviewed: Jan. 13, 2009
I used fresh celery instead of celery seed and more potatoes. It was a very good recipe, but tasted a lot like another one that I like better.

I made several changes to this including using a Spanish rice mix instead of white rice, shredded cheddar instead of Velveeta, and fresh garlic.

Slow Cooker Pizza

Reviewed: Dec. 10, 2008
Everyone loves pizza! We left out the ground beef, pepperoni and tomato soup and used black olives, onions, and our favorite pineapple. It was really, really good. I didn't cook the pasta all the way through before putting it in the crock pot and it was still a little soggy. Next time I'll leave it crunchier before adding it.

Stir-Fried Pumpkin

Pretty good. I was out of carrots, so I left that out. I served it over wild rice cooked with a vegetable bouillon cube.
