Lentils and Rice with Fried Onions (Mujadarrah)
It's amazing how good something so simple is! I use yogurt (although my husband prefers it without yogurt or sour cream) and extra onions. The onions are the best part.

Cajun Corn Soup
AWESOME SOUP! I made only a few changes. I substituted water and vegetable Better Than Boullion for the chicken stock to make it vegetarian and left out the garlic salt. I used fresh garlic and prefer low-salt foods. Also I added all the ingredients and cooked through before blending, so I only had to blend it once. Less messy. Seriously one of the best soups I've tried in awhile. I'll definitely be making it again.

Pineapple Banana Bread
5 stars with one change anyway, I substituted applesauce of all of that nasty oil. I might try using bigger chunks of pineapple next time, just to give it a little more pineapple flavor.
