Chocolate Brittle Surprise

This is great-- everybody loves it. I didn't have a microwave, so I cooked the brown sugar and butter on the stove until it was combined and slightly bubbling. Also, I used Cinnamon Graham crackers in lieu of soda crackers. A big hit!

Strawberry Jam

This was my first time making jam and it turned out nicely. It took a while for my jam to get to 220-- it hovered around the 212 mark for quite a while. I had two thermometers telling me two different temps, so partially through the cooking I added 1/2 pkg (roughly 1.5 oz) of liquid pectin for safe measure. A tip: once your jam starts to get big "Tar Pit" bubbles on the top-- it's getting close to the correct temperature.

Spinach and Leek White Bean Soup

This was a good recipe, but I only gave 4 stars because I used it more as a guideline. I upped the liquid to 4 cans of broth + 2 cups H2O. I added a whole box of roasted garlic and olive oil couscous (with the seasoning pkt) and substituted a fresh rosemary sprig for the bay leaves (I didn't have any). I didn't measure the spinach, but probably used 6 cups or so. I left the other ingredient proportions the same. The whole box of couscous made this a very thick soup, but it was very good too. Will make again.

Chunky Banana Nut Chip Ice Cream

Very good and easy to make. I would have liked for it to have been more banana-y tasting, so next time I'll add one extra banana. Everybody else thought it was fine as prepared. :)

Grilled Gyro Burgers

These burgers were very tasty--very moist and flavorful. The pita wasn't sturdy enough to hold all the fixins--it ended up leaking cucumber sauce, so next time I'll try a flat bread instead of the pita. Very good.

World's Best Key Lime Pie

I wanted a fluffy key lime pie-- not the standard egg, sweetened condensed milk, lime juice-- bake it up kind. And this was very good. I didn't have key lime juice so i substituted regular lime juice and a little lemon juice. I will do full strength lime/key lime next time as mine wasn't pucker-y enough. This is good frozen or out of the fridge. Thanks

Fish Tacos

The sauce was very good--but very spicy! Next time I'll only add 1/2 the cayenne and jalapeno. I didn't fry the corn tortillas, and steamed them instead. BIG MISTAKE. They tore and fell apart while I was trying to eat them, plus the flavor was lacking. I will try this recipe again, just less spicier and with fried corn tortillas--or steamed flour tortillas.

Easy Granola Bars

I omitted the coconut and chocolate chips, and added a dried fruit blend of cranberries, golden raisens, blueberries, and cherrys. I used whole instead of sliced almonds and added just a touch (maybe a tbsp) of brown sugar and a pinch of salt. These were very easy to make--and tasty too. Will make again. :)

Amazing Chicken

This was so quick and easy--and very tasty too! The mayo adds a nice 'bite' to the chx. I cut the chx breasts into strips instead of cooking the breasts whole--still good! A good change of dinner pace!

Caramel Popcorn

I made this last night and unwittingly did everything I could to mess it up. I added the vanilla and baking soda at the wrong time and I overcooked it on the stove (my mom and I thought it had a slight burnt sugar taste). Even with only 30 minutes in the oven (had to make room for dinner) it still turned out very tasty. Even my fussy dad enjoyed it! Thanks!
