Corn Casserole III
Lowered rating by one star because of incorrect dish size--it will NOT fit in a one quart container. One quart is 32oz yet the recipe calls for 54.5oz of ingredients. Use a 9X13 or 2qt dish. I had to bake 60-75 minutes for it to lightly brown & for a toothpick to come out clean. Added one egg per suggestion of my mom, other ratings, and similar recipes. Used salted butter because that's what I always use. The 8.5 oz corn muffin mix is code for a box of Jiffy. Overall, good flavor & goes well as a side to poultry/pork but not very economical--around $4.

Chewy Sugar Cookies
I used Country Crock and followed the recipe exactly, the dough was more like a very thick batter so I ended up adding an extra cup of flour. It was never firm enough to ball up even after an hour in the fridge so I just plopped tablespoonfuls on the pan and sprinkled with sugar. I had to cook each batch five minutes longer than suggested or they wouldn't crisp up. Came out okay, kind of plain and cakey but chewy as promised.

Roast Potatoes
Added basil too and ended up baking about 45 minutes, stirring three times. Sprayed glass pan with Pam and had no sticking issues. Very good, picky eaters like me can eat them with ketchup.
