Kielbasa Kale Stew

A started with sauteing one chopped onion, added chicken stock instead of water and then potatoes. I brought to a boil and added the kale and kielbasa. I let simmer all day with a bay leaf and broke up the potatoes right in the pot.

I used eggbeaters and lowfat cottage cheese. I sprayed butter flavored cooking spray between the phyllo layers. My husband loved this. I also add a healthy does of garlic

Sweet Pea Mockamole

instead of chopped onion I added good quality salsa. My family loves this! It's got a nice sweet flavor. I think when you eat it you have to know what it is and be pleasantly surprised. I wouldn't try to pass it off as true guac, it isn't. It is a very nice guilt free dip

Mexican Shepherd's Pie

I use ground turkey and usually add diced onion or pepper or both. This is a great easy and hearty recipe. When I was pregnant I assembled the recipe in small foil bread loaf pans without adding the cornbread mix. I froze them so that when the baby arrived it was easy to defrost on the counter and when my husband got home all he had to do was add water to complete cornbread mix, spread it on and bake it. We had individual hot and filling meals. I did the same for other expectant moms and they all agreed it was a lifesaver. Plus the dads can brag that they "cooked" dinner

Sesame Chicken Wings

This was great! I did not use white onions because I was lazy. I boiledthe marinade and based the wings before turning and then again the last 5 minutes. Cook temp and time were perfect! I used a broiler pan lined with tinfoil and the top grates prayed with Pam, cleanup was a snap.

Smothered Bacon Chicken

Glad I read the reviews. I added fresh mushrooms as one reviewer suggested and served over whole wheat egg noodles also suggested. I forgot to add the sour cream but the mushrooms gave off enough liquid to make a nice sauce. The sour cream would have probably helped with the saltyness of the dish. I used turkey bacon and my husband and I both thought this tasted like chicken corte en blue.

I lightened it up with light mayo and substituted 1 packet of splenda for the sugar. I also added salt and pepper and garlic powder. Crunchy, refreshing and yummy!

Meatloaf Cordon Bleu

Good idea for a recipe. We only use ground turkey and I used swiss instead of provolone. It does need some ind of sauce to keep moist, I did ketchup, mustard and brown sugar. I will make this again.
