Buttermilk Pie III

Reviewed: Mar. 17, 2007
I had leftover buttermilk from an Irish soda bread for St. Patrick's Day and searched for buttermilk recipes. TGhis was my first introducation to buttermilk pie. Great recipe. I also made my first successfull pie crust and the filling fit perfectly. I followed the temp and cooking time and it was golden brown with a thin, sweet and crisp top to the pie. I did use lowfat buttermilk so I dissolved 1 tsp. of cornstarch in the buttermilk before adding it. I really want to try it with egg beaters and margarine but I'm sure it won't be the same. My husband LOVES LOVES LOVES this recipe just as it is. Thanks for sharing!

Quick and Easy Spinach Pie

Reviewed: Apr. 29, 2010
I used all fat free ingredients but spiced it up with lots of garlic. The flavor was good but the filling was very thick. I will make this recipe again but I will use a 9x13 pan to more evenly distribute ingredients.

Basic Flaky Pie Crust

Reviewed: Mar. 17, 2007
My first SUCCESSFULL pie crust! I tried pie crust once upon a time and don't really remember what went wrong but this was perfect instructions! I did use butter instead of shortening because I didn't have any on hand. My husband was very impressed. I'm hoping now he doesn't expect me to bake all the time...

Tomato Basil Soup II

Reviewed: Aug. 11, 2009
I was surprised how good this was for limited ingredients and effort. I was looking for a good way to use up the tomatoes and basil in the garden and this was great on a hot summer night with a fresh baguette. FRESH BASIL is a MUST. Don't even bother with this recipe if you don't have it. I also cut back on the oil.

Plum Crisp

Reviewed: Aug. 4, 2010
I used egg substitute and did not use butter. I did add cinnamon and vanilla and sprayed the top with Smart Balance spray. I also cut the sugar in half because our fruit was sweet. I used fresh picked peaches and plums. I will make again but I think I will bake for 30 instead of 40 minutes. It was quick, easy, delicious and crunchy. Thanks!

Healthy Banana Cookies

Reviewed: Mar. 28, 2012
More cake like than cookie. Nice and sweet without added sugar. My three year old loves them. They make a good breakfast treat. I followed other reviews and used applesauce instead of oil. I also pressed the cookies into the shape I wanted before baking as suggested since they will not rise or spread.

Mexican Shepherd's Pie

Reviewed: Feb. 18, 2010
I use ground turkey and usually add diced onion or pepper or both. This is a great easy and hearty recipe. When I was pregnant I assembled the recipe in small foil bread loaf pans without adding the cornbread mix. I froze them so that when the baby arrived it was easy to defrost on the counter and when my husband got home all he had to do was add water to complete cornbread mix, spread it on and bake it. We had individual hot and filling meals. I did the same for other expectant moms and they all agreed it was a lifesaver. Plus the dads can brag that they "cooked" dinner

Sesame Pasta

Reviewed: Feb. 8, 2010
Good base recipe. I used wheat pasta and added a bag of stir fry veggies. The veggie mixture included water chestnuts which I thought were important for the texture and crunch. I used canned bean sprouts and added some garlic and teriyaki sauce. Served with Sesame wings from this site. Thanks!
