Raspberry Oat Bars

I've made this several times and shared the recipe. Quick and easy and delicious. I add cinnamon but that's the only change.

Beer Bread I

I didn't have self rising flour so added 4tsp of baking soda and some salt. Easy recipe delicious results! I haven't had beer bread in years, when it showed up in an email from allrecipes I couldn't resist.

Downeast Maine Pumpkin Bread

I took other reviews suggestions and halved the oil with applesauce and subbed in eggbeaters for eggs. This made 1 loaf and 12 standard size muffins. The kids (5 ans 2) loved it! Definitely keeping this recipe!

Byrdhouse Blistered Cherry Tomatoes

I used olive oil and a little Smart Balance instead of butter. The tomatoes are in season so there was no need for the sugar. I used the refrigerated tube of basil as another viewer suggested. I sprinkled goat cheese on mine before serving. Decadent. We all loved this! In fact, I'll make it again tonight :)

Slow Cooker Chicken Stroganoff

I likely won't make this again. The chicken tasted overcooked and even though I used lowfat ingredients it still seemed like a really rich and heavy meal. It was easy though.

Sopapilla Cheesecake Pie

I'm glad I read the reviews and let it bake longer than 30 minutes. It took a good 40 minutes and it did look very brown but was perfect. I used reduced fat crescent rolls and reduced fat cream cheese as well as light butter. It was super rich, couldn't imagine the full fat version. The honey really made it sweet and decadent.

Peanut Butter Bars I

I cut into bite size squares and placed in mini cupcake wrappers. These are so rich a bite is all you need! I stored leftovers in the freezer and they are a tasty little frozen treat.

Healthy Banana Cookies

More cake like than cookie. Nice and sweet without added sugar. My three year old loves them. They make a good breakfast treat. I followed other reviews and used applesauce instead of oil. I also pressed the cookies into the shape I wanted before baking as suggested since they will not rise or spread.

Lemon Poke Cake II

I baked in a bundt pan but otherwise followed all directions. It was like a cross between a lemon bar and pound cake. Hubby said it was just like he remembered his Nana making :)

Best Cream Of Broccoli Soup

I totally cheated on this recipe and it was so easy and yummy. I bought a 1lb bag of frozen chopped broccoli and 1lb of florets and added it to the boiling chicken stock. In the smaller saucepan I sauteed the onions (omitted the celery) added lour then milk and added to the soup pot. I used the seasoning my family likes and everyone loved it.

Candied Chicken Breasts

I cheated and coated raw chicken breasts with shake n' bake and then poured the sauce overtop. This came out so tender and yummy! Served with rice and steamed broccoli. Delish

I halved this recipe for just one pie. The family liked it & it was quick and easy. I also like that we topped it with tons of lettuce and fresh veggies so I didn't have to serve anything else with it.

Braised Balsamic Chicken

Easy to prepare. Certainly flavorful! If I make again I will take the advice of another review and cut the vinegar with stock. I love vinegar but it was a little overpowering in this dish.

Savory Kale, Cannellini Bean, and Potato Soup

I added mushrooms which "beefed" it up a little. (just because I had them in the house) I also used all stock instead of water. Other than that I followed the recipe exactly and it was a hit!

Black Bean Brownies

I like the idea of healthy dessert. The texture is fudgy. I tasted right out of the oven and could taste the beans. I let them sit and firm up in the fridge overnight and what a difference! fudgey and yummy. The chocolate chips are a must.

Winter Lentil Vegetable Soup

Healthy, economical and easy. I threw it all in the crockpot for about 10 hours on low and it could have stayed even longer. A little bland but some added hot sauce did the trick. Definitely a keeper

Fiesta Chicken Casserole

I forgot the beans and used lowfat ingredient. Aside from that I followed the recipe and loved it. The filling is loose but creamy and would make a great hearty dip. I scooped it up with crackers and didn't bother much with the crust.
