Vegetarian Penne

Ooo this was great. I made my vegetables last night and ate them on a bed of rice and finished them up today with the sauce. Trick is to add a little of your (salted) pasta water when mixing in your cream and flour. Delicious. I'm going to make it again for my friend tomorrow !

Spinach Cheese Tortellini

oh man ! I'm from Arkansas so I had to try this recipe. If you're not from the south, there's one thing yuo don't understand and it's a potluck dinner. And I would absolutely take this. I was skeptical about the tomatoes at first, but they were the TREAT of the dish. Mine kinda cooked down to looking as if they were sundried tomatoes. Now I'm not one to measure out how much of this and how much of that, but with the ingredients I used (Rice Dream rather than milk) the dish was delish! Will absoutely do it again and again; my 2 year old SCARFED his down in no time. Also, I'm not sure how this was prescribed, but I've always seasoned my mushrooms as I cook them so that's what I did with the Italian seasoning and the salt and pepper. FIVE STARS

Black Bean and Corn Quesadillas

OH MY GOD. This is WONDERFUL. I threw it together right quick so all I did was sautee the onions in butter and throw in the can of beans and corn, little sugar little salt and WHA-LA this stuff was GOOD! I couldn't have eaten mine fast enough. Seriously. My kids even loved it. The Monterey Jack was the best addition to a not even completed and A+ recipe. Will do over and over and over again. Thanks !

Cake in a Jar

I didn't get 8 either. But I used the WIDE-MOUTHED jars, so I figured that was to blame. They're still in the oven, almost ready. and will be traveling to the middle-east in a care package, along with a tub of icing for my husband whos birthday is soon. Thanks for the help, he'll get a big kick out of this.

Fettuccine Alfredo V

PHEW! I'm FULL. Delightfully Full. As happy as I would be at the Olive Garden Full. This sause makes a PERFECT appetizer for dipping bread, too. My 1 and 2 year old were quiet the entire meal and only spoke up to yell "MORE!" They ate and ate and ate and even my husband said it was "Wonderful." I'd like to reconmend using about 1.5 teaspoons CRUSHED GARLIC. I also CUT DOWN ON THE CHEESE a little and was sure to use HEAVY WHIPPING CREAM. Wonderful Meal. I plan on emailing it to all of my friends. Definately a top addition on my rotating meal list. Thanks!

Momma's Mashed Potatoes

My mashed potatoes weren't what they could be until I tried the lemon juice. I've always got a lot of half and half left over from other dishes with nothing to do with it, so this was PERFECT. I added a little garlic salt. Normally, I put in the dry ranch and/or italian seasoning, but this made me draw back when I reached for the cabinet. Will ALWAYS do.

Baked Pork Chops I

The idea was good, but the taste was off. My husband immediately was wowed about how tender the pork was. It literally flaked off-- kinda like fish it was so tender. But after the first bite rated it a 8. I'd give it even less honestly. But, we're from the south and used to the classic fried p.chops. They were beautiful though. I tried what others had mentioned about the roasted garlic AND mushroom soup.. and it STILL didn't have enough flavor for me. Maybe next time I'll season the soup-mixture.. Or even make a gravy out of the drippings when I'm done frying them? I'm not sure, but they weren't bad as is.

Cottage Cheese Perogies

These weren't bad if you like perogies. A little difficult to roll out; I easily tired of putting them together about half way through. But, they weren't bad! I added fresh steamed broccoli to my cottage cheese and it made a great combination! Be careful how much you put in the middle; it takes a LOT LESS than you think it does before you've got a sloppy, un-stick worthy mess!

Four Cheese Macaroni Casserole

I do it twice in one week. that gives me liberty to rate it twice, you think? Even more so, because my two-year old and I ate the rest of the leftovers and my husband pouted!! So, I had to make another batch of this yummy dish. I measured my spices this go-round. and used between 1/2 and 3/4 of a teaspoon of the basil and oregano, the full teaspoon of the Italian seasoning and it couldn't have been better. More fetta, less parm. And used two small fresh tomatoes again and layered them in between the macaroni and the layer of cheese on top. I found the first go round that if I mixed the tomatoes in, the macaroni wasn't as gooey/cheesy; it tended to seperate. so, the layering worked PERFECT. Try it! You Won't Be Disappointed.
