Bacon Wrapped Pesto Chicken

Reviewed: Aug. 20, 2011
This was quite a tasty dish, something a bit more unique for the not so every day dinner! I did add some Parmesan cheese and garlic powder. Just sprinkled the garlic powder with fresh crushed pepper sprinkled on the chicken and mixed the cheese with the pesto, very yummy!! I also omitted the salt, I had pre-packaged pesto which was pretty salty. I also did not use the full 1/4 cup of olive oil, because it seemed like a lot, just sprinkled it over the chicken before baking. Not too many changes but they suited my family's tastes, as I am sure the recipe is just fine as written. A great way to use up extra pesto and chicken!!!

American Lasagna

Reviewed: Apr. 11, 2011
This is the best lasagna! My husband recommends this for dinner whenever lasagna is mentioned. Will probably never make different lasagna. (Don't tell the hubby, but I do cut down on the meat and substitute chopped up zucchini, mushrooms and other veggies...he doesn't even notice!!) I also like to sub Italian sausage sometimes for some more zippyness!

Steak Tacos with Spicy Yogurt Sauce

Reviewed: Apr. 14, 2010
The only reason I'm giving this a 4 is because i did change the recipe based on what i had on hand. Instead of plain yogurt I used sour cream. It was very good! I also didn't have cheese, which ended up being just fine, and also used a cilantro and lettuce mix. Would be great with green peppers and tomatoes, will add more veggies next time. This recipe will definitely be used again!!

Crispy Roasted Chicken

Reviewed: Apr. 14, 2013
This was great! Trying to make it a bit more healthier I ended up cutting out the flour and only using 4 tablespoons of oil. I brushed it on skinless chicken breasts, it wasn't crispy but I wasn't expecting it to be without the skins on. Next time I will cut the oil down more, as it was still a bit oily after it was cooked. Very good mixture though!

Lucy's Mac and Corn

Reviewed: Apr. 24, 2011
This recipe has been in my family for years. It is easy, good and very yummy! Make sure that you don't drain the corn otherwise it will turn out chewy. I also don't add butter, never have and I doubt it would be missed from this recipe either! (Considering its the same minus the butter!!)

Pesto Polenta Lasagna

Reviewed: Nov. 19, 2010
The recipe as written seems a little bland or boring. I added a bunch of veggies like squash, spinach and mushrooms and it was very good. It would be much better with homemade sauce, but on a pinch works great. Also I did find the polenta got pretty mushy, im new at the polenta thing, next time I will try frying it up first.

Peanut Butter Cup Cookies

Reviewed: Aug. 23, 2010
Just FYI these are very caky cookies... they are almost like peanut butter cupcakes with a peanut-butter cup inside them. Either way very good, may try them with a more cookie like cookie to see how they turn out.

Biscotti

Reviewed: Aug. 23, 2010
I made the basic recipe tonight and the flavor was great! This would also be good with macadamia nuts.. I will add those in my next batch! You could almost change anything or add anything into the recipe and they would turn out great.. of course keeping to the almond extract. ( I also didn't have anise).

Pretzel Turtles

Reviewed: Aug. 23, 2010
Very easy to make, it takes more time to unwrap the candies than to bake!!I made these with the dove candies with caramel, they would also be really good with the peanut butter ones. Definitely toast the pecans.... a must!! I made them with un-toasted ones first and regretted it! Toasting the nuts gives them a great flavor! Also I have to agree that the squared pretzels from Schneiders matches perfectly with the dove chocolate selections. ( A tad more salt may be a bit more tasty for some... those who like salts more than sweets like me... the square pretzels aren't so salty!!) Great recipe thank you for sharing!!

Ginger Veggie Stir-Fry

Reviewed: Jan. 22, 2013
Great recipe and easy to change to your own tastes. I added 4 cloves of garlic (we love garlic!) and used frozen and fresh veggies of what I had on hand with a bit of chicken. Yummmmy! Also cut down the oil, I am sure the veggies are great tossed as mentioned, but trying to cut down on calories. Definitely worth giving a try!

Sweet, Sticky and Spicy Chicken

Reviewed: Nov. 22, 2011
This is a great recipe, I did follow the reviews though and dredge my chicken in flour and pepper. I also cooked the chicken on high heat to give it that nice crispy-ness, turned it over for a couple minutes then lowered the temp and added the sauce. It worked out great, the chicken was crispy and the sauce was nice and thick. Great recipe thank you for sharing!!

Roast Sticky Chicken-Rotisserie Style

Reviewed: Sep. 29, 2011
This is a very tasty chicken!! I had a 5lb chicken that cooked in 3.5 hrs though.. a little faster than I was anticipating. Still yummy though. Also cut the salt in half. I made one batch of the spice and had to throw it away because it was way too salty.

Charley's Slow Cooker Mexican Style Meat

Reviewed: Sep. 23, 2011
I just made this a couple days ago and it was great! Had to adjust the spice because we don't like it too spicy, but still like some kick. Be careful not to add too much water, I think I did it came out a little soupy. So I took a reviewers suggestion and saute'ed it in a pan before making my enchilada's worked out perfectly. Thank you!!
