Baked Pork Chops I

I've made these twice now. I made them last night for dinner and, as I was setting the items out for the mixing, I realized I was almost completely out of bread crumbs. So I decided to use quick oats instead and it was still fantastic!! I just mixed the oats with a little basil, oregano, parsley, thyme, and garlic and used it the same as the bread crumbs.

Chicken Rotini Stovetop Casserole

This recipe is DELICIOUS! My husband is NOT a fan of casseroles, but this is a little bit more like a pasta dish than a "casserole". (We're from The South where anything called a "Casserole" is mixed with mayo or COMS and covered in a layer of crumbled crackers with tons of cheese and baked for a while.) I made this for him and his bandmates one evening this week and it received stellar reviews!! It's perfect for the spring/summer because it's so light tasting. The flavor of the basil and bell peppers mixed ... that's trick, I think! I changed a couple of things. I followed one reviewer's idea of using only two pans -- one for boiling the pasta and the other for everything else. Excellent idea. Who wants to wash an extra two pots?! And I also added a dose of garlic to the chicken and bell pepper while it cooked. (Maybe ~1/2 tsp.) This will definitely be a repeat at our house! Yum!!

Black Bean Soft Tacos

This recipe is EXCELLENT!! I also made rice and Fresh Tomato Salsa (a recipe also from this site). Topped with sour cream, that is a recipe for KILLER burritos!! And it's great leftover too!

Fresh Tomato Salsa

This salsa is delicious. I did follow some reviewers recommendations, however, and cut back the amount of chile peppers. I'm glad I did. Two peppers was the perfect amount. The smell of this salsa leaves a lot to be desired because the amount of fresh onions. This made me think, "Oh, no! No one's going to eat it because it's too oniony." But it all got eaten with not much of a problem! :)

Easy Slow Cooker French Dip

You don't get this recipe because you're looking for something that's healthy, that's for sure! But if you're feeding a bunch of guys after a rigorous band practice (as I was when I tried this recipe) it'll be inhaled quickly and with much enjoyment. I made no changes. This is definitely an easy "when the guys are coming over" type of a recipe.

Salsa Chicken

This isn't a five-star recipe, necessarily, but this chicken is delish!! I worried that it wouldn't have much flavor, since it wasn't marinated before hand. But I followed the recipe for the first time and I'm glad I did! It has a great great taste ... without being overwhelmingly "taco-" or "salsa-flavored." The salsa gives the chicken a delicious flavor. Will definitely go on repeat at my house.

Oatmeal Baked Chicken

My husband LOVED this recipe and I liked it ok. Next time I will try it with a few changes. I think I will probably melt the margarine and the garlic together let the chicken "marinade" in that for a few minutes while I put the rest of the ingredients together. I felt the chicken was kind of bland inside this VERY flavorful coating, and this will probably help the chicken to have a little more flavor of its own. I loved the idea of the oats on the outside. Very different texture -- very good! Overall a good recipe, but with a few changes, could probably be GREAT!

Super-Delicious Zuppa Toscana

Yummy!!!! My husband found this recipe online and we gave it a go last weekend. I made this soup as the appetizer and fettuccine alfredo as the main course. This soup was so good we made a meal out of it, though! :) Two things I will change in the future: I'll use less sausage and about 1/3 the amount of crushed red pepper. We generally like spicy, but this was a bit too spicy for our tastes. Otherwise, it's delicious! Five stars and an easy entry in the Frequently Used Recipe Collection! Thank you for sharing!

Mixed Vegetable Casserole

My grandma used to make something that was similar to this when I was a kid. Hers wasn't quite as mushy or "soupy" as this, though. Still looking to find out what the difference was. I also found this recipe to be quite salty, but that could be because of the mayonnaise I used.

Easy Mushroom Rice

SO yum!! I LOVE mushrooms, but my husband is allergic. So I divided all the ingredients and put them into two smaller dishes. I made his without mushrooms and the flavor was still very good! For mine, I used real mushrooms and sauteed them for a short time, as other reviewers recommended. Will DEFINITELY be using again!

Chili Potato Burritos

This recipe is a solid 4-stars! I used boxed mashed potatoes to save time. I'm a vegetarian and my husband isn't. I'm always looking for options that are "meals" for me and "sides" for him. This qualifies. He got chicken enchiladas with spicy, cheesy potatoes on the side!

I added a liberal amount of cinnamon and a TBSP of butter to this recipe. It was delicious and well-received. Especially good when toasted and buttered! Will definitely use this recipe again!

Chicken Garlic Pizza

This pizza was very good. I'm not sure if it's a five-star recipe, but it's definitely going to be on repeat in our house. My husband really enjoyed it -- and he loves pizza, so that was the true test! He doesn't eat tomatoes, so I left them off of his side and I don't eat meat, so I made my side with just tomatoes. We also added mozzarella on top with the parmesan with much success.

White Chocolate Fruit Tart

Oh. My. Gosh. SO good! I didn't do the glaze for the fruit because I thought it would make the fruit kinda mushy. It was perfect as is. Oh, that filling! I served it to a friend and I believe her exact words where, "Rita, you're going to want to molest this dessert!" THAT good!
