About this Cook
I'm a working mother of a only child. My husband has taken over most of the cooking duties in the house due to the stressful nature of my job. He's become quite to accomplished cook himself. I wish I could cook more. My mother was a highly regarding cook and cake decorator and she passed down several family favorite recipes. I recently learned I actually passed one up to her.
My favorite things to cook
Chicken pot pie, shepherd's pie, cupcakes, cookies, a variety of pies, coffee cake, casseroles.... just to name a few.
My favorite family cooking traditions
Probably Thanksgiving. For many years, I made all the pies for Thanksgiving dinner and would spend Thanksgiving eve baking an assortment of them. One year I made the southern classic pecan pie. When I didn't make it again for Christmas dinner, the in-laws were very disappointed. I promised to make it again every year, but the only request was that they say pecan the way I do, with my native Texas drawl. Not wanting to break the rule, my father-in-law simply called it 'that nut pie'.
My cooking triumphs
I guess my cooking triumph would be making a recipe that my mom would make her own. When I got my first apartment in 1988 or 89, I 'borrowed' a couple of cooking magazines from my mom. One of them had a recipe for chicken pot pie with a sweet potato crust. I made it for her and she loved it. I eventually mailed her a photocopy. Apparently she impressed many people with this recipe too. She passed away in February 1999. Recently my brother passed along to me a cookbook my mom wanted me to have. There in the pages of that tattered community cookbook was the envelope I mailed to her with the photocopy of that recipe. All those years my mom made that recipe she used my photocopy. That meant the world to me, mainly because I had lost the magazine in a move.
My cooking tragedies
I made a couple of things that weren't immediate hits, but nothing that would be considered a failure. My husband however has had one. One night while I was out he thought he could make a poor man's macaroni and cheese by melting Velveeta cheese and dumping it over cooked elbow macaroni. Usually he can eat just about anything, but that was too gross. I told him that unfortunately he still needed to add other stuff to it to get something decent out of it. It was an important lesson learned for him. Bless his heart.

Baked Macaroni and Cheese I
My husband made this for dinner tonight on a whim and it turned out great. We've been eating his mother's traditional mac & cheese with mixed success. Next time we'll try some of the other suggestions for variety.

Chicken Pot Pie IX
This is a wonderful comfort food recipe. I took the advice of other reviewers and added 1/4 tsp. garlic powder and 1/2 tsp. poultry seasoning and prebaked the lower pie shell for 7 min. Next time I'm going to add 2 potatoes to the veggies/chicken and put some chicken boullion in the gravy. My DH says it's not quite 'chickeny' enough. But an excellent, quick recipe for chicken pot pie. Highly recommend.
