Bourbon Chicken

Really enjoyed this recipe, and thought it was incredibly easy. I used whiskey instead of bourbon, I figured same difference. I doubled the recipe and it turned out well, I used low sodium soy sauce, and added about 1 tbsp. of honey to cut back on the saltiness. The meat turned out tender, I also think this could be good on the grill, I'll have to see come summer.

Philly Mashed Potatoes

Everybody really enjoyed these, I thought it went a little overboard on onions, so next time I may use half of a raw onion. I also make a recipe similar to this with just mashed potato and cream cheese, which is comparable. I also added some fresh parmesan cheese, I would make this again.

Quick and Easy Spinach Bread

Truth be told, I don't think it gets all that much easier. If I were making this for appetizers I would likely make two or three loaves because I didn't get a ton out of it, but since I was serving it as a dinner side, it worked out wonderfully. Really easy, and just as good as the spinach bread I get at pizzerias here in upstate NY, and much cheaper! I highly recommend this one.

Broccoli and Carrot Lasagna

This lasagna was really easy, tasted ok and used a lot of ingredients that I had on hand. I served it with alfredo sauce, but in hindsight I didn't really need that. I used ricotta, not cottage cheese, I imagine that made things a little more solid. My only complaint was it was a little on the thin side, this taste was all right, I don't know if I'd serve it for any reason besides it was lent.

Spinach and Mushroom Salad

I thought that this salad was ok, because I don't care all that much for sweet dressings. My mother said it reminds her of the spinach salad her mother made when she was a kid. I have to say this much though, the simplicity of the preparation couldn't be much easier. The dressing was especially easy. A time saving hint: if you save bacon grease, use the recommended amount of that, and put real bacon bits on the salad.

Bruschetta III

I guess that making bruschetta at home isn't for me. I added a little pesto to cut back on time, and it didn't work out. Very strong, so I think I'll stick to getting this out and leave it to the pros.

Spanakopita

This was a really nice addition to a greek themed dinner I prepared for my family on Christmas Eve. I made the pie on Sunday night and cooked it through, and it refridgerated successfully and I warmed it in the oven Tuesday night and served. The phyllo dough was tough to deal with but worth the effort. I served it with pastitsio, tzatziki dip and pita and a greek salad, all of which you can find recipes for. What a good meal!

Hash Brown and Pork Chop Casserole

Unfortunately I found this dish incredibly bland and boring. I do like a casserole that isn't strong in flavor sometimes, but this was way to bland for me. If you like au gratin potatoes it may work for you, but I just wasn't impressed, so I doubt I'm making this again. Which is a shame because it was really pretty simple.

Mexican Rice

I'm never using boxed red beans and rice to go with Mexican food again! In the past I was a little lost as to what to serve with tacos, or fajitas but now I have an answer. This was really easy, and it tasted a lot like the mexican rice we eat at a Mexican restaurant in my area. Of course, I can't afford saffron, so I omitted it but other than that the ingredients were pretty normal and easy to find. And no one was repulsed by green peppers, which the kids have a problem with every time we sit down to eat.

Quick Chicken Divan

This recipe was ok, instead of Lemon Juice, I added white wine, which you couldn't detect so I may add more. Anyhow, I also didn't think the two breasts was enough when I went to assemble the casserole, so I used canned chicken, even though I never recommend canned meat products. It was ok, except for it had a strange taste from the canned chicken, kind of like tuna. I served this dish with garlic mashed potatoes, overall had I used normal chicken I probably would've really liked this dish.

Chicken Francese

Ok this recipe was not that bad, but it wasn't anything that much different from an alfredo until I added some things. When I melted butter to make the cream sauce, I sauteed the green onions and also added some white wine. This added a special taste, that set this dish apart from others I have served. Using chicken cutlets made cooking the chicken fast. Also perhaps adding a little prosciutto and giving that a quick saute with the wine and onion would make the dish good too.

Pink Sauce Beef Tips

This was a really good meal. I made it on a Saturday night, good because it takes a little time to cook. I made a from scratch alfredo sauce. I also used vodka instead of marsala wine, because vodka was what I had. It turned out really good. Vermicelli was a little fine for the beef, I would suggest linguine or fetuchine. I also would suggest simmering the meat for about 45 minutes, I only did it for 15-20 minutes, and it wasn't that tender. Good though, and the kids liked the pink sauce.

This is going to be a staple for weeknights in my house. The ingredients were all in the house, and I could get rid of leftover mashed potatoes. The kids really loved this, and to think I was worried about the different ingredients tasting bad? Oh and it took me all of a half hour to make.

Beef Paprika

This recipe is comfort food. It's nice to have a subtle dinner, that isn't bursting with flavor sometimes. My family loved it, I cooked it in my turbo cooker, and just used it as a conventional skillet, and the stew beef fell apart. Next time I will add a little more water to start with though, I like more gravy. Also a recipe I had similar to this had pieces of carrot in it so I have put in large pieces of carrots which adds a little more depth to the stew.

If your inexperienced in the kitchen, keep looking for a recipe to impress, this is a real toughie. At least I thought so. It was absolutely excellent though. Oh and don't make this on a weeknight, it took me quite a while. But don't worry this is totally worth the effort.

Tzatziki II

Where I live there is this delicious Greek restaurant that is famous for this dip. They serve it with hot pita bread and feta cheese and it is excellent. This stuff tasted just like it, took me ten minutes to throw together, and kids don't even realize that their eating cucumber, onion and garlic. I used parsley instead of mint. This is a keeper!

Enchilada Casserole III

We don't eat a lot of mexican in our house outside of the typical taco. This was good, did have to use flour rather than corn, apparently in Upstate NY no one thought about corn tortillas, turned out just as good, served with another recipe for mexican rice, I would recommend that too. Heats up nicely.

Rich Macaroni and Tomato Bake

Very good, reminded me of Pastitsio a bit. Also reminded everyone of lasagna, except it was a lot easier for me, especially the cream sauce, what a snap! Definitely keeping this one on file

Broccoli and Stuffing Casserole

This one was kind of dry when layered, so I think I will try mixing it together instead of layering it. However the broccoli part tasted good, but save the cheese for later it got crusty.
