Salisbury Steak

Turned out tasty and goes into the keeper file because unsuprisingly, Salisbury Steak is economical. I added some milk and a can of beef broth along with additional flour to thicken the gravy. I also fried sliced onions with the steaks. The taste was familiar, which is what I was looking for.

Chicken Manicotti Alfredo

This turned out absolutely wonderful. I doubled the recipe and ended up with two full dinners for a family of five (four of them hungry males, self included) and enough leftovers for two lunches. I added one box cooked chopped spinach to the filling, which was tasty and added color. To cut back on fat I used skim-milk ricotta and low fat mozzerella, although this took effort it was very well recieved and would be a great crowd pleaser when having guests. This, salad and garlic bread and we had more than enough.

Seasoned Turkey Burgers

I've tried turkey burgers a couple of times before and they haven't worked out. I decided to give these a shot when ground turkey was on sale. These were ridiculously easy. I used a countertop skillet that is plugged into the wall to cook my burgers, basically frying them, and they cooked right through and stayed together, both of which were previously challenges. The flavors were good (I used low sodium soy sauce) and my family decided they might even prefer them to traditional beef burgers. I'll definitely be making these again.

Mary's Roasted Red Pepper Dip

This was ridiculously easy and relatively fast, most of my ingredients were already on hand, and the taste was interesting and a big hit with adults and kids. I served this with pita triangles and crackers, and it went over really well. A great option because of its ease and taste.

Aunt Jewel's Chicken Dressing Casserole

I thought this casserole came out very well. Per previous reviews, I added two stalks of celery, 2 cups mushrooms, 1 jar of pimiento and 1/2 a chopped onion all of which I cooked before adding, I'd suggest doing so in a bit of the chicken broth. I also added a 1/2 cup of mayo to the 2 cans of soup, I used only cream of chicken as I don't care for cream of celery. This turned out well, I like my stuffing to be moist so I used more broth, in the future I might add more stuffing to the recipe. I only had herb stuffing on hand so that is what I used. Although I made a lot of tweaks, I'd say that this recipe was very good, and came together fairly easily.

Patty's Pasta Salad

I too have a very similar pasta salad recipe to this one. Instead of Italian I use red wine viniagrette, which gives the salad a nice color. I don't use ham or pepperoni but I use lots of salami, and I always add cucumber and broccoli. Also it's easier to half cherry tomatoes when they are in season. The taste is always well received, and pasta salads are economical for the summer.

Hammy Hash

Sometimes I enjoy cooking breakfast for dinner and I thought that this would be a nice change of pace for me to make. I enjoyed the taste and it was a stick to your ribs kind of meal combined with eggs and toast. I used Sara Lee Deli Ham as I didn't have leftover at the time and thought it was good.

Caramelized Baked Chicken

This chicken was easy but the end result was just ok. I was only able to use boneless chicken breasts, they turned out very tender and juicy but I didn't care for the sweetness. This chicken was reminiscent of pineapple chicken without the pineapple, it was a little too sweet and kind of fruity tasting, despite adding other things to cut back on that. Although it was easy, I'm going to pass on this one and consider making the bourbon chicken recipe instead.

Hearty Fettuccini Bolognese Sauce

I think this was an ok recipe for pasta sauce. I felt the whole ordeal was too labor intensive for the result. Granted, I'm not particularly familiar with bolognese sauce, and was trying this for the first time. Really though, I don't think I'll make it again, the only reason that I'm giving this dish a 3 is because I don't think I'd like this sauce period, even in a restaurant.

Chicken and Biscuit Casserole

This casserole was relatively easy and tasted good. I felt that the basil was somewhat out of place, I wouldn't use it next time in this dish, and I neglected to put any in the biscuit mix. This is a great winter dish, I'll be making it again, just using different herbs than basil.

Aussie Chicken

This was one of those dishes that involved a lot of prep work, but was delicious. The ends definitely justified the means. I didn't quite have enough mustard, so I added some dijonaise to make up the difference, I also omitted corn syrup and it was delicious. One last difference, I sauteed mushrooms and also onions, and everyone loved it. Serve with Philly Mashed Potatoes, also found on this site.

I thought this was going to be something different, and it ended up being very familiar. An easy and excellent potato salad, I love mustard in mine, and this was just great. Tasted just like my southern grandmother's.

Angie's Dad's Best Cabbage Coleslaw

This recipe tasted pretty good, It was easy and it went well with bagged coleslaw mix. I also omitted red cabbage because I didn't want to chop it and the whole dish tasted great. Definitely let it sit though, I only let mine sit a few hours and it would've been better if I had made it a day ahead.

Angel Chicken Pasta

Yuck, I didn't enjoy this dinner at all. Maybe it was just me, because the rest of the familysaid they liked it, but I just thought the taste was too strong. There were some really strong flavors going on here that just overpowered me. I'm thinking it was the golden mushroom soup, which I never used before and won't use again. I don't recommend this one.

Bodacious Broccoli Salad

I'm not lying when I say this stuff is like candy for me, I keep saying that I'm just going to make this recipe and not eat so much, and I end up wanting to down the whole thing. I cut back on the vinegar (one cap full) and add 3/4 cup of sugar to my dressing, also I completely omit lemon juice. No one who tries this doesn't like it.

Spicy Sweet Potato Salad

I have to say this was really unique. One of my local grocery stores makes a three potato salad that has sweet potatoes in it so I knew that this was really a great addition to potato salad. The curry flavor really punched things up. I liked it, I think I would also consider the addition of green onion, I also omitted jalapeno pepper because it kills my stomach. Overall though, nice color, great flavor, fairly easy, and sweet potatoes are good for you, all good reasons to try this one.

Balsamic Tortellini

I'm not making this one again. Although it was really very easy, I felt like it was totally tasteless. It was definitely missing something, if not missing everything. I don't recommend this one, I was expecting something with more taste, and ended up with a very bland dish.

Broccoli Cheese Soup III

Now that it is spring time and families hit the concert/baseball game/awards dinner rush that accompanies the end of the school year, I find it difficult to make a meal that tastes good and demands little of me. Usually soup and sandwiches, consists of condensed soup and bologna. Tonight I made this soup, it tasted great, demanded hardly anything of me and I didn't feel rushed making it. Nice and thick, I added an additional spoon of cornstarch, and also another half cup of cheese, definitely looking forward to trying this with the carrot as well.

I thought this recipe was very easy and flavorful. I was afraid of the recipe list because I thought it would be a budget buster, but it turned out to be not so bad. I added some balsamic vinegar when I added mushrooms, which I think improves the flavor. I would definitely try to thicken the sauce next time though, perhaps with some cornstarch. I used strip steaks, I would double the amount of meat called for if you're feeding a family, but the marinade was great and the meat was tender. The whole dish was very unique and certainly worth my while.

Cheesy Chicken and Chive Sauce

I thought that this was very easy, I didn't have to buy much to make it, and it had a really unique taste. I may use more mustard next time just to boost the flavor, but all in all I would definitely make this again. The sauce went well over rotini.
