Floating Island Punch

I made this for thanksgiving this year, and there wasn't a drop left. A great nonalcoholic option, this came together very easily and was enjoyed by kids and adults alike. I used only one cup of sugar and that was plenty. The color was a little ugly but using pink lemonade plus the addition of cherry juice fixed that right up.

Cheesy Creamed Spinach Casserole

This one is really fast, really easy, and I always make it for Thanksgiving because it reheats well (good for a make ahead side) and is an indulgent way to have spinach without going to all the effort of making homemade creamed spinach.

Red-Skinned Garlic Mashed Potatoes

I found these potatoes to be excellent, just what I was looking for in terms of having a garlic taste that was not overpowering. I used unskinned yukon gold mashed potatoes per previous reviews, and really thought this added a buttery taste. I think I'd prefer them over red potatoes in this side. A great and easy method for roasting garlic too, I enjoyed how the garlic mellowed and was not as sharp, much easier to work with as well.

Bubba's Best BBQ Sauce

I'm only giving this recipe a three, because I found it to be strangely sweet, but some of the folks I served it to said they really enjoyed it and like their sauce sweet. If you like sweet bbq sauce, this is a good one. This recipe is also heavy on ingredients, I had to thicken it with cornstarch. I'm thinking a sauce with coca-cola in it isn't for me. Worth a shot if you're a fan of sweet, not spicy bbq.

Texas Chicken Quesadillas

I had no ideas that making quesadillas at home was this easy. I thought these were easy and a great light summer meal. I added precooked bacon to my quesadillas for added flavor. These are always a hit when cooking for children.

Antipasto Squares

These squares tasted delicious, were easy to prepare, and when they were taken out of the oven looked gorgeous. This would have gotten five stars, but the bottom layer of dough came out mushy and I had to flip and bake further which was a pain. I'm considering trying the pillsbury pizza dough because I think it would make this even easier, next time I'll bake the bottom for five minutes first, before assembling.

Flank Steak With Horseradish Sauce

Although I am self admittedly not a steak fan, the rest of the family loves them so I made this and even I enjoyed them. Rather than flank steaks I used strip steaks that were on sale, and the steaks came out quite tasty. The marinade was easy and light on ingredients and prep time, but the meat should marinate as long as possible (mine marinated for two days). The horseradish sauce was excellent, it is a recipe that I will use just for horseradish sauce in general. Overall an excellent way to prepare steak.

Spicy Tex-Mex Salad

I didn't think this recipe was bad, just not great. I wouldn't make this again, only because the flavor combination was strange to me, and didn't pair particularly well with the tacos I served it with. I would suggest using a little less salad dressing, as I found the mix to be soggy.

Pan-Seared Chicken Breasts with Shallots

I thought this chicken was just okay. Although it was very tender, I did not feel that there was much taste to the dish, and found it in fact to be somewhat bland. If you do decide to make this, I would not recommend mashed potatoes, I served this along side mashed potatoes and rice would've paired much better.

Amish Macaroni Salad

This one recieved rave reviews, it was fast, easy, tasty and used relatively few ingredients, most I had on hand. I made only two changes, I used Hellman's mayo, and only 1/4 cup of sugar. I thought this was good, and a keeper in my summer repertoire.

Cheeseburger Soup I

I have the best luck with soups from this website. This was delicious, easy and filling. The whole family enjoyed it. I may try elbow noodles in place of the potatoes to make my life a little easier (less chopping), a great weeknight throw-together dinner. This soup is rich enough to stand alone, and economical to boot.

Chopped Olive Sandwiches

I was very unsure of myself with this recipe, which I tried bc I needed to bring finger foods to a grad party that was vegetarian. These turned out to be very easy, and well recieved at the party. I don't care for olives and when I tried these, I thought they were very good. I used white bread and also a whole grain bread, make sure your breads are dense and not overly soft, as this makes the sandwiches easier to assemble and easier for guests to eat.

Horseradish Burgers

These were good burgers and easy to throw together. With the addition of two eggs I did not have much trouble keeping the burgers together, the important thing is to flip them infrequently. Not sure how much I loved the taste of the steak sauce, but then again I'm not a steak sauce lover. It was well recieved by everyone at the table, and will probably be prepared again.

Garlic Cheddar Chicken

Since I'm often cooking for one or two people it is difficult to find recipes that can be taken down to scale. This chicken is a great way to use a couple of extra chicken breasts when I need dinner for just myself. This, pasta or ricearoni, and a small salad makes a really easy well rounded meal that I can throw together bc I have most everything in my pantry already.

Hash Brown Casserole I

I used this recipe to replace a hashbrown casserole recipe that I had lost, and I prefer this one. I used the Bob Evans brand hashbrown and I thought that added extra spice which was good. I also added some paprika for color and spice. I used one can cream of chicken and one can cream of celery. Although these took a while, they came out really tasty, I made them ahead of time and they heated up well. The only other change I would make is to add more cheese, cut in half the amount of crackers for the topping bc I thought there was too much topping, and cut the bake time w. the topping back to 20 minutes. Thank heavens I checked mine 20 mins in or I would've had a burnt ritz cracker crust. A nice Sunday side dish.

Chicken Valdostano

I really enjoyed this recipe and thought it was pleasant tasting and light. Everything came together well, and we enjoyed the taste of the mushrooms so much that I would consider making them that way for steaks. The only reason this isn't five stars is that I was not in love with fontina (I had never used it before), frankly I think I'll just use fresh mozzerella as it is less expensive and has a similar texture. Also one other change was coating the chicken in egg before flouring it.

Spinach Dip in Pumpernickel

I tried this recipe out a little intimidated because of the low fat ingredients. In an effort to slim things out for a few of the guests that would be sharing it, I used all low fat dairy ingredients, and you never would have known it. That's coming from someone who thinks low fat dairy is tasteless. I used my magic bullet to cream the cottage cheese, and everything was done within a half hour. There was such a unique combo of ingredients and the pumpernickel smelled wonderful in the oven. I can't wait to make this again, this was gone in no time.

Beef and Biscuit

I rarely give recipes a one, but the taste of this was not enjoyable. I don't care for spicy and so I omitted the green chiles, tasted weird with the egg. I cooked this recipe at the temp and for the time given, and my biscuits burnt on the bottom of the greased pan. I threw this out, I won't make this again.

Cheddar Chicken

I love this recipe except I use italian breadcrumbs instead of cornflakes. What I do to add extra flavor is I melt the butter and also fry a clove or two of minced garlic in it, and then once the butter is melted it sits for twenty minutes to meld the garlic flavor into the butter. I then dip the chicken in the garlic butter and then into the breadcrumb/cheese mixture. Add a little more cheddar on top toward the end of baking. This is some of the moistest chicken I've had.

Caesar Hot Artichoke Dip

Although this tasted pretty good, I won't make it again bc it came out of the oven a soupy brown ugly mess. Thankfully I took it to a small gathering, it looked awful, but everyone gave me a pity try and said it tasted good. It finally firmed up the way I would've liked it around the time it got cold. For clarification's sake, I added way more cheese to try to thicken, I won't try this one again.
