Candied Kielbasa

I enjoyed this kielbasa. I used one pound of kielbasa, changing the recipe to 1 cup ketchup, 1/2 cup brown sugar and 1/4 cup horseradish. I thought the horseradish mellowed the sweetness and although I love horseradish, I am glad the taste wasn't like cocktail sauce. Using the original recipe I would've hated it as it would be too sweet for me. I served mine with leftover mac and cheese and cooked on the stovetop for an hour.

Chuck's Favorite Mac and Cheese

This mac and cheese was cheap, easy and delicious. I would suggest shredding your own 8-10 oz block of sharp cheddar for better flavor, I also added a tsp brown mustard and some dashes of hot sauce for flavor. My only change will be omitting the butter from the topping. Rather than mixing it into the breadcrumbs I had cut the butter into small cubes and dotted the casserole with it which lead to it being greasier than necessary. Frankly I don't think this needs any butter as there's plenty of dairy to begin with. Very good though.

Sicilian Meat Roll

This meatloaf was tasty and very rich. I added a bit of parmesan romano blend to my meatloaf mix to make it taste like I would make my meatballs. I enjoyed the cheese (I used provolone), however the deli ham tasted a bit out of place in my opinion. I may not add meat next time, or if I do I might consider capicola or some Italian deli meat. The rolling method went easier than I expected and I served this with penne tossed with homemade sauce, I also put a little sauce on the meatloaf before I topped with the cheese slices.

Remoulade Sauce a la New Orleans

I didn't add the olives or capers and I still thought this was far too salty tasting. I didn't enjoy this remoulade sauce at all. I thought the chili powder was odd tasting on the crab cakes I served this with. I had to scrape mine off, this recipe didn't do it for me.

My Crab Cakes

These crabcakes were just okay. Firstly, they didn't yield much, I followed the recipe and ended up with three cakes. Thankfully I was only cooking for one. Secondly, these crabcakes were short on crab. Although the taste was better than anticipated, I would add more crab, probably double what is called for. I did like the taste of the ritz crackers which were a nice tasting filler.

Chicken with Asparagus and Roasted Red Peppers

This dish was just okay. What I liked about it is that the recipe took a very short amount of time, and had fresh ingredients. What I'm not fond of is the poaching method for the chicken, I thought that cooking the chicken this way led to the chicken itself tasting bland and not taking the flavor of the other ingredients on. If I were going to do this again, I would use sun dried tomatoes, rather than the roasted red peppers which is more personal preference than anything. I would add some white wine and the chicken broth after pan frying the chicken breasts. Finally I did not have mozzarella and instead used provolone which turned out even better. This recipe provides a good foundation for a great weeknight meal if you tweak it based on what you like.

Light and Fresh Dressing

Although this is not the absolute best salad dressing I have ever had, I did think it tasted good and find it appealing that everything ingredient I needed I already had to make the dressing. This did end up being light tasting despite the oil and mayo, a good dressing if you like sweet dressing or bottled sweet vidalia onion salad dressing.

Simple Macaroni Salad

Although this recipe was simple, those eating it, including myself, found the overall result fairly bland. I like the concept though and next time I make this I'm going to add some broccoli and carrots along with a packet of ranch dressing mix. I'm hoping this will add some more flavor to the salad. Also, I did add sour cream to the mix along with adding more mayo and this was still dry after sitting for two hours.

Old Italian Meat Sauce

I give this one a five after I made some changes. I liked how the seasonings were in this, unique and fresh, I left out the rosemary and added fresh basil although I made sure not to add more basil than I did oregano. My sauce was a bit salty, so I added probaby 4-5 tsps of sugar, I think the saltiness comes from canned tomato. In the future I may use a can of crushed tomato which I think would create a consistency I prefer. For heat I added some sliced up italian sausage which I added raw to the sauce and let cook along with a little crushed red pepper. I used two cups of red wine, that was plenty. Simmer it an hour at night, and then leave it over night to simmer another few hours the next day. Went great over Rigatoni.

Creamy Italian Dressing II

I enjoyed this dressing. I did add about 1 tsp of Italian seasoning in addition to the oregano, because without it I felt like the mayonaise taste overpowered this dressing and I like a zesty Italian. Nice consistency and taste though once I made this change.

Summertime Sweet Pickles

Thought these were really easy and very tasty. My only suggestion would be to use seedless english cucumbers, my store ran out of them and so I used regular cucumbers. Unfortunately these cukes got limp after sitting in the vinegar but I suspect using seedless would solve this. Definitely will use these again.

Aunt Betty's French Dressing

At first this dressing was a little sweet for me, so I added a bit short of 1/4 cup more vinegar, and 1 tsp fresh ground black pepper. I think this would make an excellent barbeque sauce/marinade.

Gyros Burgers

These were absolutely delicious. I was not able to find ground lamb, usually it's more available in my area around the holidays, so I just used ground beef and doubled the recipe to make 8 patties. The seasonings were good, I was skeptical of the cumin but this was very similar to what I get at our local greek restaurant. I served mine with fresh flatbread from the local middle eastern bakery, tzatziki and a rice pilaf salad. What a nice switch from summer hamburgers and hotdogs.

Kerri's Holiday Punch

I couldn't crack this punch out fast enough, I didn't use quite as much southern comfort as was called for but the punch was nice and smooth and perfect for summer. I had made another batch as I had this for a large party and it was easy to do ahead of time and just throw lemon lime soda in at the last minute. Definitely a keeper.

Pepper-Parmesan Dressing

Thankfully I tweaked this recipe based on previous reviews, or else I think this would've gone in the garbage. I added about 1/3 cup light hellmans mayo to the dressing to thicken which resulted in the desired consistency for me, although not as creamy as a restaurant version of this dressing. I cut the vinegar back to 3 tbsp. which was plenty. I upped the fresh black pepper a bit based on personal taste. This needs tweaking still, next time I'm using one clove of garlic bc that taste was stronger than I would prefer. All in all I will try this again though bc it was fairly light for a white dressing.

Marinated Carrot Salad

Although this was easy, and I thought the taste was pretty good, no one else did bc apparently they were either "too sweet" or "missing something." Either way I guess I'm not going to bother with these again only bc the family gave it a thumbs down.

Authentic Thousand Island Dressing

This salad dressing was delicious, and the recipe yields a ton of end result! I also found this to be an easy throw together courtesy of can chopped olive. I too added some chili sauce to get a slight color in it that would get folks to try it. This one's a keeper.

The Best Banana Pudding

This was a delicious and easy banana pudding. I added one 8 oz can of crushed pineapple to my first layer of bananas, which is minimally detectable and gives the pudding a nice depth of flavor. My family had this packed away in no time.

Southern Living Magazine's Chicken-Fried Steak

This country fried steak came out beautiful and delicious. I accidentally put in more red pepper than was called for and it turned out to be just the right flavor and we don't eat spicy stuff. I also added some garlic and onion powder, and paprika to give more color. My only complaint was that there was so much milk in the egg dip for breading, I'd cut that back by half bc it was way more than necessary. I made my own pan gravy with beef broth.

Country Pie

I didn't think this was anything spectacular. I would use this for an occasional weeknight meal because it is easy, can be thrown together quickly and quite cheap to make. Everything cooked just right in my oven. I put a solid tsp of all three herbs into the rice mixture, I think the flavor would have been lacking if I hadn't.
