Creamy Dreamy Chicken and Spirals Casserole

I thought this casserole was rich and delicious. I served this up for a Sunday dinner, adding mushrooms and broccoli florets to the casserole to round it out. The cheese sauce was comforting but was different than normal due in part to the wine. I used penne pasta, and would recommend a tube pasta with ridges to hold and soak in the cheese sauce. This doubled easily and the leftovers were just as tasty.

Green Pea Casserole

I made quite a few changes to this recipe, that suited my family's tastes and made this a delicous new ways to have peas. First I used two cans of peas instead of one. I omitted water chestnuts and instead of a cracker topping I used durkee french fried onions. I test ran this at Easter with 15 guests to great reviews - this warmed up excellently and is a great make ahead option.

Peach Raspberry Cobbler

I made several changes to this recipe, first I added brown sugar to the fruit mix instead of white sugar, I enjoyed the deeper flavor of the brown sugar more than I would have the white sugar. I cut back on the butter in the dough - will not do that again found the dough to come out a bit hard.

Tangy Turkey and Swiss Sandwiches

I found these sandwiches to be really good. Prepared them with Hungarian Mushroom Soup found on this site, I was admittedly nervous about the strength of the red onion being overpowering, but stuck to the measurements and found the spread to be tangy and a good match with the honey turkey I used. I used a panini press for mine and kept them in the oven at 170 while I finished the soup.

Warm Blue Cheese Dip with Garlic and Bacon

Although this dip was tasty, I was a bit dissapointed in the lack of blue cheese flavor, I'd cut back on the bacon as that's all I could really taste. As for the garlic, I did not care for it being cooked in the bacon grease and think that next time I will put just one minced clove in raw, prior to baking. On the bright side I did find this easy to prepare and a different style of warm dip.

Moist Turkey Burgers

These burgers were pretty good, I would cut back next time on the poultry seasoning, but these turkey burgers stayed together than any others I have made and had the meatiest texture - I prefer turkey burgers that don't taste like they have a ton of filler. These burgers didn't taste like that at all.

Balsamic Pea Salad

I really enjoyed this salad, I liked the combination of sweet, tangy and salty from the peas, balsamic and feta respectively. I chose to make mine the night before and it was very good. Not everyone responded as positively as I did though, the strong flavors will have to grow on some.

Chicken-Stuffed Shells with Sherry Sauce

The only mistake I made in attempting this meal was being overly ambitious on a weeknight - I was in the kitchen much too long tonight, but it was worth it. I bought the Gruyere, it was expensive but worth it, sharp and delicious - it does not taste like swiss cheese to me more a cross between swiss and sharp provolone. I too chose to use marsala wine instead of sherry, I think marsala is not as strong and the substitution was delicious. My sauce needed a lot of thinning from chicken stock, the roux stayed in roux form once i added the liquids slowly... it seized right back up. Delicious, even if it took a while and dirtied a lot of dishes.

Kalamata Pork Tenderloin with Rosemary

Although this recipe came together quickly, I found the flavors a bit underwhelming and although everyone liked the pork - no one really seemed like they would care for it again. The ingredients in this do tend toward the salty especially if you're using a dry red wine, I would not advise cooking wine for this at all.

Tater Tot Hot Dish II

This casserole was very good and easy to prepare. I was a bit concerned about lack of flavor, so I added a bit of worcestershire sauce and steak sauce to the beef and onions. I also added about a tbsp of ketchup to the soup mixes and added 1 1/2 cups shredded cheddar which I layered over the meat, topped with potatoes and then soup. I may add the french fried onions a bit later on next time, they got a bit brown and some burnt.

Chops with Sauerkraut

These pork chops were delicious and easy to make. I had boneless pork loin chops from Schwanns. Having read previous reviews saying the meat was tasteless, I browned mine in bacon fat with onions. I then followed the recipe to the tee - except I had no brown sugar so used a bit of molasses. The chops were tender and flavorful, the combination of sauerkraut with applesauce was delicious and the kraut still tasted like kraut with something extra. I did not rinse my sauerkraut although I did drain it. Served mine with mashed potatoes but think this would go well with pierogies or spaetzle.

Shredded French Dip

This was very easy to prepare in the morning before I went to work and I came home to a pretty easy to fix supper. I broiled these on submarine rolls with swiss cheese and also prepared horseradish sauce to put on them. The au jus was delicious. My only dissapointment was the meat was not as tender as I expected but I think this was due to the meat itself and not the preparation. Definitely a keeper.

Chicken and Sausage with Bowties

This is a hearty but quickly prepared pasta dinner that tasted like I put a lot more effort into cooking than I did. I love the flavors of sausage and chicken together, and thought it was great to use turkey sausage instead of pork sausage for the sake of good health. I used a little bit of tomato paste to thicken my sauce, and doubled everything so we'd have plenty of leftovers. I added several other seasonings including a bit of marjoram, oregano, onion powder, sugar (to cut the salty taste of canned tomato), and a pinch of allspice - all of which made this sauce taste delicious and slow cooked. I also used ziti with lines instead of bowties - we don't like farfalle much. Everything was delicious and everyone's looking forward to taking leftovers to work tomorrow!

Tangy Sugar Snap Peas

These peas were delicious and super easy. The microwave preparation cooked them perfectly and made life easier when paying attention to multiple sides on the stovetop. I was afraid these would be too sweet but the apple cider vinegar really got into the peas and gave them just a bit of tart flavor that was really delicious. This recipe is definitely a keeper and a great way to use fresh sugar snap peas.

Poppy Seed Salad Dressing

This salad dressing was well recieved, but in the future I would definitely cut the sugar back to maybe 2/3 or 1/2 a cup. When I suggested that at the dinner table, everyone agreed although the dressing was tasty it was a bit sweeter than we'd like. Side note: I served this over a spinach salad for guests about 5 days after making the dressing. For whatever reason the sweetness was tempered and the dressing was delicious - it was actually the most raved about part of dinner!

Creamy Garlic French Dressing

I would double this recipe the next time around so I'd have plenty of extra to get me through, but keep the garlic the same (my family likes garlic but not in large doses). The tang from the yogurt paired well with the zing of the dijon, this was nice and light and super easy.

Pecan Chicken Breasts Stuffed with Cream Cheese and Broccoli

This stuffed chicken was excellent, I was afraid that the pecans might be a bit overpowering, but stuck with the original measurements and was pleasantly surprised. Bear in mind that you really must allow the stuffing to chill, I did not give myself enough time and had a hard time keeping the stuffing tucked in the chicken breasts. I skipped the pan frying part, just opting to bake everything for a bit longer until chicken was cooked. Delicious.

Fresh Asparagus and Chicken Casserole

I thought that this casserole was good based on the changes I made, if I had made this as-is, I would have ended up with a very bland casserole. I used pimiento rather than red pepper to skip having to chop, I enjoy pimiento in casseroles anyways. I omitted celery as I had none. I added a bit of sage and thyme in addition to the oregano. After baking the casserole I stirred it, adding additional sour cream, with a pinch of nutmeg and a tsp of brown and serve, heating it through for about ten minutes in the oven. After these changes we all enjoyed it. As per previous reviews complaining of crunchy asparagus, fresh asparagus is crisp and we enjoyed it.

Deep Dish Layered Salad

This just did not work out for me, the mayonnaise dressing did not have a ton of taste. I would prepare the salad again and leave the dressing off, but preparing it as is, everyone in my household ended up eating a sandwich.

Chicken and Bacon Shish Kabobs

This recipe tasted good and was a nice switch during for the summer time when grilling leads to repetition. I was a little dissapointed with the marinade which I think lacked some flavor - I would love to throw a little bourbon into it and see how that tasted. One other point - I used metal skewers and would advise people to stick with bamboo for this recipe as the kabobs were difficult to turn and slid around the metal. The fresh grilled pineapple was delicious.
