Rich Macaroni and Tomato Bake

Reviewed: Oct. 14, 2001
Very good, reminded me of Pastitsio a bit. Also reminded everyone of lasagna, except it was a lot easier for me, especially the cream sauce, what a snap! Definitely keeping this one on file

Broccoli and Stuffing Casserole

Reviewed: Jan. 1, 2001
This one was kind of dry when layered, so I think I will try mixing it together instead of layering it. However the broccoli part tasted good, but save the cheese for later it got crusty.

Rigatoni Florentine

Reviewed: Dec. 17, 2000
Wow, what an excellent dinner. After a 1/2 cup of fresh parmesean into the sauce to make it more "alfredo'y" I served this. Delicious I will definitely be making this for our Christmas gathering, perhaps even New Year's. Especially good for families used to big portions.

Garden Veggie Pizza Squares

Reviewed: Aug. 19, 2000
The woman who submitted this was right, once you try it, its a must have for all your events. It is light, yet flavorful. Make the cream cheese mixture the night before, cook the dough in the morning, slather on the cream cheese, and then cut it up just before serving. But beware, these little goodies are tempting, and you may eat all of them before they get to your guests. Fresh Parmesean on the top is a nice touch.

Crab Delights

They ended up tasting all right. However, I think I may throw in some horseradish to pep this one up a bit. Easy, and it looks lovely

Chicken Stroganoff I

Reviewed: Aug. 19, 2000
This was great. I made some changes, I cubed the chicken, I chopped up the mushroom really finely (the kids dont even detect it!), and I added a bit more browning sauce to darken the colors. The hour that the stroganoff simmers, is a worry free hour, you barely have to come back to it. The leftovers taste as great nuked!

Lizzy's Creamy Chicken Bake

Reviewed: May 9, 2000
I love this dish, it's that simple. When I made this for my family, I served it with mashed potatoes, stove top stuffing, and vegetables. I was very pleased that everyone loved it, it is the easiest whole dinner I have ever made. My only complaint was a little on the salty side, thats easily fixable! Lately to make it easier, I have been browning frozen chicken tenderloins (unbreaded), which has cut back on time and makes portioning it out easier, bc I never want a ton of meat.

Baked Honey Mustard Chicken

Reviewed: Mar. 10, 2000
I was very impressed by this great chicken. All I have to say is this is the pantry crisis dinner. It took no time to assemble, and I enjoyed it. My brothers and parents loved it, and it is going to be on the table again soon!!!

Ziti Chicken and Broccoli

Reviewed: Mar. 5, 2000
I tried this when a bothced effort due to a family members pnuemonia kept us home this past Valentines Day. The ingredients were very user freindly. Rather than cooking the broccoli, about three minutes before doing the sauce, I stuck the chopped broccoli in a ziplock, and steamed it in there. The kids liked it, but the vegetables in it wont appeal to most children. Not an easy dish but it has a remarkable taste.
