Creamy Herbed Pork Chops

Strawberry Oatmeal Breakfast Smoothie

This is a good concept and is filling, but there was something about the milk and fruit combination that didn't appeal to me. I ground up the oats first, so there wasn't a texture issue. Since I do prefer a juice based smoothie, I proablay won't make again.

Apple Carrot Muffins

These are fantastic! First, I love that the batter truly makes 12 regular size muffins. I left out the nuts b/c of allergy issues. I used 1/2 cup brown sugar and 1/4 cup white sugar. I used plain old bran flakes. I wasn't sure if I should crush the cereal or not, so I did just a bit and the texture was great! I added 1/2 tablespoon of nutmeg and 2 tablespoons of apple butter because I wanted a very apply muffin. I also sprinkled with a bit of white sugar before baking. These are simply wonderful.

Ex-Girlfriend's Mom's Salsa Fresca (Pico de Gallo)

Insanely good! I added some minced garlic and used less jalapeno, only b/c we don't like a lot of heat. I kept everything else the same. To cut prep time, I pulsed with the food processor, just until everything was diced, I did not process until smooth. Served it with carnitas and the crowd went wild! Thank you for this excellent recipe.

Chocolate Chip Banana Muffins

WOW!!! Because of dietary restrictions, I used applesauce instead of oil, brown sugar for white, plain soy milk instead of yogurt and spriknled the tops with sugar before baking. These are amazing!!!

Chicken Tagine

Super winter comfort dish. As others have said, do not overcook this (4-5 hours max on high). I used breast meat b/c I didn't have thighs. I made it with golden raisins and carmelized the onions first, as another reviewer suggested. We do not like couscous, so I served it over brown rice. I like the idea of adding yams; next time, I'll give that a try. Yum!

Roast Pork with Cranberry Glaze

Absolutely fantastic!!! I followed the advice of others and brined the meat for 3 hours before putting it in the slow cooker. Once the meat was done, I skimmed the fat off of the juices and made extra glaze from the remaining broth. I served it for Christmas dinner and got rave reviews.

Sweet, Sticky and Spicy Chicken

Very good! Double the sauce and dredge the chicken in flour before cooking. Add par boiled veggies and serve over rice. Very nice!

Chocolate Cut Out Cookies

This is a great recipe. As suggested by others, I only added 2 eggs and 1 extra tablespoon of cocoa and the dough was the perfect consistency for rolling. The cookies were exactly what I wanted. Thank you!

Eggplant Parmesan II

Very nice recipe. You do need to bake the eggplant longer than indicated. Take the time to drain the eggplant by sprinkling it with salt, letting it sit for 20 minutes, and then rinsing it before baking. I served it with rigatoni on the side and had plenty of leftovers. Nice change from meat.

Chocolate Peanut Butter Pie II

Everyone raves about this. I add an extra pudding cup, use an OREO crust and dress up the top with Cool Whip, crushed peanut butter cups, and chocolate syrup on top. Fabulous!

Strawberry Cake and Frosting I

Gorgeous cake! I made this cake for my mother-in-law's birthday and it was fantastic. The only change I made was to fill it with a strawberry glaze made from the remainder of the berries and top it with whipped cream instead of the frosting for a lighter version.

Slow Cook Thai Chicken

We absolutely loved it! I followed the suggestion to reduce peanut butter to 1/2 cup and increase broth to 1 cup. Other than that, I followed recipe as written. I served it over basmati rice and went heavy with the garnishes. It was wonderful - perfect for a cold, snowy, Cleveland day.

Fresh Cherry Crisp

This was great! Like other reviewers, I left out the crisco and only used 1/2 a stick of real butter. I also cut way back on the sugar in the filling. I used one can of dark red tart cherries and one can of royal anne cherries (no pie filling). I added cinnamon and pecans and it came out perfectly!

Potato Casserole

I made this for a family gathering and it was a huge hit! As suggested, I used the O'Brian potatoes and it came out great. I lowered the fat by using fat free sour cream and used about 4 tablespoons of butter over the corn flakes. I will definitly make this again!
