Veggies in Vinaigrette

This was absolutely fantastic! I made it for a family BBQ and it was a huge hit! Since then, I've made it a number of times with various veggies and you just can't go wrong- use whatever you have on hand. The last time I made it, I cut the oil in half. It came out good, but it took longer for the flavor of the herbs to be incorporated in the dressing. If you cut the oil, make sure you marinate at least over night! Also, keep a close eye while you're cooking the veggies. It's best when they are crisp-tender!

Mushroom Orzo

This was fantastic! I made it a little differently- I used 1/2 of a large sweet onion, diced and 2.5 cups of whole wheat pasta. Since I used more pasta, I also added more wine and water (1.5 C water and 3/4C wine). It was so delicious! I'll definitely make it again. I'm not sure if all of the butter is necessary- you might be able to cut back to reduce the fat content a bit.

Cornish Game Hens with Garlic and Rosemary

This was a really easy and delicious recipe! I used the same amount of sauce for 2 hens and it was a good amount. I guess it depends on how much liquid you boil off- I made it quite thick, but it was fabulous! I'll definitely make it again!

Leftover Chicken Croquettes

This was a really great way to use up some leftover rotisserie chicken! It was very tasty! Instead of frying, I made the croquettes, rolled them in breadcrumbs and baked at 350 for about 30 minutes. They were SO tasty!

Sage Pork Chops

This was simple, but very good! I didn't measure out the spices, just sprinkled on salt, pepper and dry sage, but it came out very tasty! Also, after simmering, I removed the meat and cooked the boullion down into a gravy to pour on top. That was very good, but might be better to thicken the boullion with flour instead as it got quite salty this way! Also, I used the leftover meat on a salad and made up a dressing with lemon juice, salt, pepper and sage. It was very good this way, too! Overall, this is a very nice recipe!

Muenster Chicken and Mushrooms

I made this for my daughter's birthday party and it was a total hit! I cut the chicken into bite sized pieces and I used Italian style bread crumbs. The night before the party, I breaded it, browned it and layered it with the cheese and mushrooms. Then, right before the party, I added the broth and baked it. It came out very good this way! 7 lbs of chicken made 2 full sized party trays. There was 1/2 tray left at the end of the party and I had many volunteers to take the chicken and many requests for the recipe!
