Blackberry BBQ Sauce

This was for pulled pork. I didn't have blackberry preserves but I used cherry (so I guess... Cherry BBQ Sauce!) but other than that I followed the recipe.

Delicious Ham and Potato Soup

Like this recipe needs another glowing review, but it really is perfect! I scaled it up to 12 servings, added about 1.5 teaspoon of dried parsley and 1 tablespoon of Worcestershire sauce (both in while the veggies were boiling). I added some carrots (2 chopped) and corn (about a cup) and some white American cheese at the end (3 slices) that I needed to use up. It was hard to cut myself off!

Tex Mex Black Bean Dip

This is good! I only had 1/4 cup of onion and added about 1/4 cup of yellow bell pepper that needed to be used. I used hot salsa instead of the tomatoes and picante sauce and pepperjack for the cheese. Add a big dollup of sour cream and eat it with blue corn tortilla chips.

Homemade Flour Tortillas

I usually don't post a review when I don't follow the recipe exactly but this one still turned out great! I used the Smart Balance butter that has olive oil in it in place of the lard and half whole wheat flour. They still turned out great. I scaled it down because I was worried about how well they would keep but they were still soft after a week and gone after that!

Best Spanish Rice

This was soooo easy! Mine turned out fine with the amount of salsa listed, but if yours is super chunky (i.e. has less liquid) you might need more. I agree that the 2 T of onion is pointless - you'll need to add much more to notice it. We used water instead of chicken broth to accommodate the resident vegetarians, and I added some garlic salt.

Spaghetti Carbonara II

Fantastic. I love everyone's suggestions. The only one I have to add is instead of adding more oil when/if your pasta dries out - just save some of the pasta water and use that. There's enough fat going on in this recipe already!

Avocado, Tomato and Mango Salsa

The only changes I make are to use only 1/2 of an avocado, use grape or cherry tomatoes, and skip the oil. YUM. I'll be eating this all summer.

Peanut Butter Cookies VI

Beer Margaritas

The recipe is good as is but several of the variations already mentioned have proved delicious as well- Try a can of 7-Up instead of the water, and add a little Triple Sec to the mix for a true margarita flavor. You can't go wrong with these! We call them Beer-garitas.

Lemon Garlic Tilapia

I give this 5 stars for how easy the recipe is. I am just learning how to cook fish, and this was great for a beginner. It tastes great as well, a perfect basic recipe. I did follow another reviewer's advice and used a higher cooking temp for less time (400 degrees @ 12 mins), and added crushed red peppers to the butter.

Microwave Corn on the Cob

Works like a charm! I can't even tell the difference between this and boiled corn. Since I normally only cook for myself and sometimes one or two other people, this makes more sense than boiling the water and doing it the traditional way.

Savory Grilled Corn

I was in a hurry so I used this recipe on microwaved corn on the rob rather than roasting it. I just used the mayonnaise mixture as a spread. It was good - the combination of spices are an interesting flavor. I think next time I will try mixing them with butter or margarine rather than mayonnaise, though.

This recipe is great but its basically the same as the one given on the Betty Crocker web site - http://www.bettycrocker.com/recipes/recipe.aspx?recipeId=36083. The only difference is the parsley which I leave out anyway.

Quick and Easy Vegetable Soup

This soup was delicious. I modified it only slightly, using all canned veggies except fresh carrots & celery. I used vegetable broth instead of chicken. As opposed to Creole seasoning, I used garlic and an Italian seasoning blend because I don't like spicy food very much. It was excellent last night and I am sure it will be better when I have the leftovers this evening!

Beer Cheese Soup III

I made this and it was pretty good the first day, but the vegetables in the leftover soup were a little soggy the next day. I used two small packages of frozen vegetables instead of the carrots and mix listed in the recipe. I also added an extra cup of chicken broth to make up for the extra veggies.

Salsa Chicken Rice Casserole

I really enjoyed this recipe, but I made a few changes - I halved it because I only cook for myself, and whatever friends come over to steal leftovers. I used chopped green pepper and sliced mushrooms in addition to onion. I used medium salsa, brown rice, and chicken that I grilled on my George Foreman grill. I used the Mexican blend cheese and also added cilantro, and it turned out terrific! I'll be putting this in tortillas for lunch tomorrow.
