Salmon and Swiss Chard Quiche

This is a lovely dish. colorful, flavorful -- perfect for breakfast, lunch or dinner. It's more of a frittata, because of the lack of crust. I baked it in a quiche dish. I used leftover grilled salmon, and simmered it in a little more than half the milk called for in the recipe to give it a little more moisture. I served it with some grated parmesan cheese, sour cream and salsa. Yumm!

Salmon Cakes II

Lovely! I tweaked the recipe just a tad by adding colorful bell peppers, a little garlic and another egg (because the mixture didn't bind well when formed). The recipe also made more patties than called for (I formed seven 3" to 4" diameter patties). That's a bonus. I'm heartily impressed!

Juicy Roasted Chicken

My, oh, MY -- this is the most amazingly juicy and tender chicken I have ever had! I seriously cannot remember eating a breast from a roast chicken that was this succulent (and decadent!). I'm floored! I will never buy another store-bought rotisserie chicken again...EVER!

Delicious Ham and Potato Soup

This soup has become a staple in my house. The original recipe came out a bit thick, in my opinion, so I halved the flour and butter called for in the recipe, then add a little cornstarch in cold water to thicken it up a tiny bit more. This also reduces the calories just a little. Reliable old standby!

Curried Coconut Chicken

I *love* this recipe! I use a custom blend of curry powder from a local spice shop. I made it before and I also had an issue with it being too liquidy. There is a simple solution: just take the lid off the pan during the cooking time and let it cook down. Perfect!

Slow Cooker Italian Chicken Alfredo

I'm floored! This will be a favorite meal forever! Easy to prepare and oh, so flavorful! I did tweak the recipe a little: I cut up the chicken into small pieces, for easy spooning when serving. I added about 1/2 cup finely chopped onion with the mushrooms and cream cheese mixture. Gave it a nice fresh taste with a little extra texture. The cream cheese was the lower fat neufchatel cheese; the soup was lower sodium Campbell's Healthy Request condensed cream of chicken soup. The mushrooms were 8 oz of sliced fresh crimini mushrooms. Wonderful stuff! My SO raved about it! We will be doubling the mushrooms next time (we love mushrooms)!

Beer Chops II

I am genuinely surprised! I didn't expect much from this recipe, but I have to admit I really liked it! My SO went crazy for it - and I'm more of a beer person than he is! I will say this, however: Be choosy about your beer. The flavor of the beer is intensified in this recipe, so if you don't like it enough to drink it, you won't like what you cook with it. For the beer-shy, go for a mild lager (Budweiser, Coors, etc.). If you're bold, go for a nice dark ale, porter or stout, but if you don't want that bitter taste magnified (and it will), mix between a teaspoon to a tablespoon of sugar or honey to the brew before you pour it over the chops. Next time, I might sear the chops before I put them in the slow cooker for some color (they came out a little pale), and shorten the cooking time accordingly.

Crock Pot Portobello Chicken

Very simple. Very good. I made two small adjustments: I used boneless chicken breast and baby bella (crimini) mushrooms. The sauce from the dressing made a wonderful dressing for the angel hair pasta. We loved it! Next time, I will add a lot more mushrooms!

Mushroom Potatoes

This is pretty good, although I discovered that my slow cooker was on the small side--it was difficult to get all of the ingredients layered into the pot and have the lid on tight. So, I placed foil over the top of the pot and snugged the lid down as best I could. In a little over an hour, the volume reduced to the point where the lid fit, so removed the foil. I was a bit disappointed that the soup didn't seem to seep down into the layers as well as I had hoped (which could also have been a result of having a too-small slow cooker), so I will probably divide the soup among the layers next time, as well as reducing the amount of ingredients. Still, it was tasty, and it's a nice comfort food for cold nights. I'll be making this again.

Cranberry Pork Chops II

Very nice! What a wonderfully different way to make pork chops! As others had suggested, I kept my sugar on the light side, as I didn't want it too sweet. Had it and some stir fried kale and a sweet potato on the side - yummy!!

Peanut Butter and Banana Dog Biscuits

Like others, I did not have any wheat germ on hand, so substituted oatmeal. I just rolled them out into little balls and used a fork to mash 'em down like others have done as well. My dogs love them (I'll need to make much bigger batches as they are BIG dogs), and they even taste pretty good to the hoomans!

Cajun Chicken and Sausage Gumbo

This was great stuff! Took an awfully long time, and my SO and I felt it was missing the addition of shrimp, which are the reasons I felt it just missed the 5 star mark. Having said that, it's even better the second day, when the flavors have gotten acquainted. We added some shrimp to the leftovers and we were not disappointed!

Blackberry Balsamic Chicken

Very easy and quick. I loved the subtle, sweet herb flavor. The chicken breast was very tender and cooked just right. The sauce (more of a glaze, actually) added a nice depth and looked great drizzled on the chicken. I used 1 tsp of dried lemon thyme in place of fresh, but followed everything else exactly. I didn't need the cornstarch, as I thought the sauce reduced quite nicely. A wonderful blend of flavors, which went very well with a nice salad and herbed potatoes!

Fiber One® Chocolate-Peanut Butter Haystacks

These were easy to make and tasty. The cereal gave it a satisfying crunch. I used dark chocolate and whole-fat peanut butter to make mine. A downside is that they are really messy to eat, because the chocolate melts in your hands. They were nice, but not something I'd make just on a whim.

Garlic Chicken Sausage and Summer Vegetable Saute

We loved this! Quick and easy to make. The flavors were lovely in combination. Since polenta is so easy to make, I didn't bother with buying it premade. I had white corn meal on hand, so made it myself. My SO mentioned that the texture of the chicken was a little "rubbery," so I may have overcooked the sausage. All told, it's a great, weeknight meal!

Wonderful! I love frittatas, so I knew this would be great. We were not disappointed! I did add two extra eggs, because the size of my pan was a bit larger than the recipe called for. The result was still chock-full of flavor!

Italian Chicken Sausage Stuffed Portabellas

We really liked this! Instead of using portabellas, I decided to use the criminis I had on hand and made them as appetizers for our Sunday dinner. I added more garlic (you can never have too much garlic) and skipped the chive garnish. A flavorful, quick appetizer.

Savory Mango Guacamole

I *love* guacamole. I've made the quick and easy guac with mashed avocados and salsa, and I've made it fancy from scratch. So, please believe me when I say that this one is fabulous! I made it exactly as written. We had to stop ourselves from eating all of it and spoiling our appetite for the rest of our Cinco de Mayo meal! Savory, sweet and just plain delicious!
