Swanson® Ultra Creamy Mashed Potatoes

This was good. An interesting departure from the plain old mashed potatoes. I used Yukon gold potatoes, as I like the texture and flavor better. The broth added just a little more depth. I'll use this again.

Quick and Flavorful Vegetables

I used baby carrots for my veggie. While this was an interesting change, I'm not used to my carrots *not* being just a little sweet. Not for me, but I think others might like it better.

Tetrazzini

I like tetrazzini, but this one seemed not to have the "wow" factor. It was good, but I thought it could use some jazzing up. I will kmake it again, but add a bit more pizzaz. I love that this can be frozen and served later, and I made several lunches for the office from this recipe.

Cheese-Stuffed Giant Meatballs

This was pretty good. I made a couple of substitutions: I used regular bread crumbs, and ground chicken (I don't eat much beef) so I know that changed the end result. I did not have a muffin pan, so formed the loaves into servings and baked on a cookie sheet lined with foil. It was easy to make (I love meat loaf), so I'll make it again, using the panko crumbs and perhaps ground turkey. A nice weeknight meal.

Ohmygoodness! I LOVE this! What a wonderful, flavorful and healthy meal! Easy to pull together and it keeps well for lunches during the week. This will be a regular!

Pizza Alfredo with Roasted Vegetables

This was great!! The only things I changed were that I cut the meatballs in half, so used only half as much (they were just a bit big for easy eating), and I used sun-dried tomatoes in the packet (not in oil), and soaked them in a little olive oil to infuse the flavor. It took a bit of prep, so I'm not sure just how often this will be made, but this *will* be in my repertoire of out-of-the-ordinary, fun things to make!

Creamy Lemon Chicken

Very nice and easy for a weeknight meal. I would have liked for the fat content in the sauce to be lower (I'm trying to lose weight), but all in all, really nice. And I loved the lemon zing!

Fast Feta Spread

My rating for this as written is just 3 stars. The feta made the spread way too salty, so I doubled the cream cheese. That made it better, but it still needed more "zing," so I added some sun-dried tomatoes, which did the trick! My co-workers cleaned the dish right out in record time! After my tweaks, a strong 4.5 stars!

Cottage Cheese Clam Dip

This is an okay dip, as written, but it really needs more "oomph." I and my co-workers didn't get enough of the clam taste. I like the idea of using cottage cheese, but I think more tweaking is in order.

Bell Pepper Frittata

Very Nice! While I kept faithfully to the ingredients, I changed up the presentation and cooking method. First, I couldn't find any red bell peppers I liked, I used orange - the recipe works with any bell pepper. And instead of putting the mixture into a whole bell pepper, I cut the peppers in half lengthwise, so the egg part is more visible. I think its prettier presentation. I also used crumpled foil to keep the peppers from rolling when putting in or taking out of the oven. All in all, a great idea - I will put this on my regular rotation!

Sweet and Tangy Thai Cucumber Salad

This was a nice, easy and refreshing salad. I thought it was too sweet for my taste, so I will reduce the sugar next time. Also next time, I will experiment with adding herbs. I think dill will go with this quite well. A keeper!

Soy Sauce Chicken

Very simple, very good! I only changed two things: I removed the skin before cooking to reduce the fat and I doubled the green onion, adding half of it to the chicken while it simmered. This will be on my regular rotation!

Spicy Chicken and Sweet Potato Stew

Fabulous! I did make a couple of changes: I omitted the red pepper flakes and in place of the cocoa powder, I substituted a lovely Zanzibar curry powder that I adore. I have to agree with some comments that while good when freshly made, letting the flavors meld overnight does magic. So easy and quick, too!

Mango Chicken

With the exception of cutting up the mango, this was a really easy meal. I halved the recipe, but left the amount of mango intact - that seemed to solve the lack of mango flavor that others mentioned. I didn't want to overcook the chicken in the process of browning it, so erred on the side of not quite browned in favor of allowing the chicken to poach in the delightful orange-mango sauce. I found it delightfully fruity and light-tasting. No rice needed - just added some steamed veggies for an excellent summer meal!

Fresh Broccoli Salad

This was very good as written, but in making it again, I made a few tweaks: I used 1/2 the onion called for - it was very strong on the first go-round. I *love* Craisins, so subbed that for the raisins. I also thought the dressing was way too sweet, so used less than half the amount called for this time and used more vinegar to thin the dressing out a bit more. Next time, I may experiment with yogurt instead of mayo for a slimmer result. That said, this will no doubt be a staple, as my coworkers scarfed it up in record time!

Italian Chicken Marinade

Simple, easy and delicious! I let the chicken marinade for more than 24 hours, which let the flavors meld well. I broiled rather than grilled the chicken. It was flavorful, tender and juicy. This one is going in my weeknight meal file. :-)

Sweet Potato Salad

A very nice change of pace from the usual potato salad. Not too much mayonnaise; not too little. My SO, who likes mustard-based potato salads, said this one didn't need any. I added a little balsamic vinegar for a little more punch. Did not have red onions, but used regular and added some roasted red pepper for color. Did not have parsley, either, but this stands well without it.

Eggs Benedict

Very good. I'd never made eggs Benedict before, but it came out just fine. It was very helpful to make the eggs ahead of time, to be sure that everything was timed properly. Unlike what other reviewers said, I did not think that the sauce was too lemony. My SO said he'd never had it before, but he really liked it. Not one I will make often because of the prep, but I will make it again.
