Mocha Coffee

I ran out of creamer and thought I'd try making my own flavored coffee. This was far more delicious than I anticipated! I had a latte size coffee cup, so adjusted the amount of ingredients accordingly. I also LOVE nuts with chocolate so added a few drops of pure almond extract. (I wish I knew how to get the almond flavor "toasted".

Meatball Nirvana

These were THE BEST meatballs I've ever made! Aside from making a double batch; I followed the recipe exactly. For those cooks out there who use lower fat beef, be sure to spray your baking sheet with Pam. My first batch stuck but the second one came off nicely. Thanks for the great recipe.

Oatmeal Raisin Cookies IV

Excellent! Due to previous reviews stating that the batter was dry, I fluffed the flour before measuring it and turned out just fine. These are really good!

Spinach Quiche

Best quiche I've ever made! I followed the recipe exactly. It was perfect! I might add artichoke hearts next time. Not because it needed it but because it would have went so well with it. My husband does not like feta cheese. He had NO IDEA it was in there. ha Thanks for the great recipe. It will be in my "keeper" file!

Scallops Mascarpone

I gave this recipe a 4 instead of 5 only because the sauce was bland. I added a pinch of nutmeg, salt and a few hot pepper flakes to it. It helped. I'm wondering; has anyone tried adding a splash of white wine to it? I really thought that was all that would be needed but I was concerned it would curdle it. I added a little flax seed meal to the sauce as well, but that's only b/c I knew you wouldn't be able to taste it. (Hey, I do what I have to do to counteract the junk food my husband puts in is system! ha) I substituted whole wheat pasta for the white. Again, the hubs didn't know the difference, although I could tell. Safeway had a great sale on colossal shrimp so I cut them up the size of scallops. I'd love to know if anyone has cut back on the butter and how it tasted. The dish was delicious and I wouldn't want to lose the flavor that the butter gives it. I will make this again! Thank you for sharing it.

Egg Salad Sandwiches

This is a good recipe. I had a feeling the onion might be a little over-powering for my taste so I reduced the amount to 1/8 C. My hubby isn't too crazy about dill, I decreased it as well to 1/2 tsp. It still turned out tasty! We also liked eating it on hamburger buns instead of regular bread. It was a little firmer to the bite.

Pumpkin Pecan Cheesecake

I made this in individual mini graham cracker pie crusts. It made 12 and worked well as a dessert to take to a party. No one had to mess with slicing it and everyone loved it. I will say however, that making it this way took away from the pumpkin-y flavor just a bit because the pecan topping was stronger. Delicious, but stronger.

Hamburger Steak with Onions and Gravy

Hamburger is my "go to" meat when I want something quick and easy to fix. This was a tasty, quick dinner that I will make again. Due to the other reviews I doubled the gravy. I didn't have any sherry so I substituted red wine vinegar. I don't know if that threw off the flavor but it certainly didn't ruin it.

Classic Macaroni Salad

For me, when it comes to macaroni salad, it's all about the sauce and this one is a keeper. The only change I made was to decreased the sugar to 1/4C. It was lightly sweet and couldn't be any more perfect. I like to throw in whatever is colorful and in season as well such as red and orange bell peppers,cucumber, radishes, etc. I also like to fold in a few chopped hard boiled eggs and some cheese crumbles. Delicious!

Lime Chicken Soft Tacos

The flavor of this meat mixture is fabulous! I used cilantro instead of oregano. (It's just not mexican food without cilantro!) I also cut my ckn in strips instead of cubes and didn't cook it as long. If you have access to Mexican cheese, use Cotija. Yum. Next time I boil ckn, I plan on shredding some to use with this sauce mixture and fry up some corn tortilla's for chicken taco's. ooh, or how about ckn chimichanga's?? Thanks for the recipe!

Cabbage Rolls II

These were awesome! The kitchen smelled sooo good while these were cooking. I used to make these years ago, but never could get the sauce quite right. This was perfect! I dbld the meat mixture and will use it to stuff green peppers, bake and freeze for a night that I don't have time to cook. Thanks for the great recipe!

Turnaround Turkey and Rice

This was tasty! I added more turkey, because 1 cup wasn't going to fly at my house. I also added chopped carrots to the celery and onion saute and added some frozen peas at the very end. If time is short, I'll bet you could just add some frozen mixed vegtables at the end and it would still taste great.

Broccoli Beef II

This was a big hit! Having a stir fry with pasta instead of rice was a nice change. I didn't use quite as much bouillon as the recipe called for only because I was concerned with the sodium content. It didn't hurt the taste of the dish. Delicious and I will definatly make it again!
