OK, I have to admit, the first time I made these, they turned out horrible! The package of cake mix that I used was only 16 oz., so the proportions were off, and then I left them in the oven for too long, so they got really hard. I was ready to throw away this recipe, but I decided to give it another try. I used a different cake mix (Dr. Oetker's organic chocolate cake mix), and I substituted coconut oil for some of the butter. (Coconut oil is VERY good for you, and it's also great for baking!) I threw in a mixture of bittersweet chocolate chips and white chocolate chips, as well as 1-2 tsp. of peppermint extract. I baked them for exactly 8 minutes, and they came out perfect. They taste just like thin mints! Oh, and I got a whopping 50 cookies out of this batch!
