Apple Cole Slaw

Very good but time consuming. I will defiantly make this again for a party but it takes too much time to make for just me and my husband. I used fat free plain yogurt instead of mayo. Follow the advice of other reviewers and sprinkle salt on the cabbage and let sit to help "dry up" some of the extra liquid. Additionally, put lemon on the apples while cutting them to keep from turning brown. Still use the original amount of lemon for the dressing. UPDATE: I wouldn't spend the time with adding salt to the cabbage to soak some of the water up. Just serve with a slotted spoon. Two days later, still eating it. Everything is still crisp. Very good and still looks great.

False Cabbage Rolls

This was very good. I made a couple of changes based on what I had and other reviews. I had spaghetti sauce to use up so I used that rather than tomato soup. I also added two cans of diced tomatoes. Next time I will use the tomato soup along with at least two cans of diced tomatos. I used ground turkey and next time I will use 2lbs of ground turkey or1lb ground turkey & 1lb ground sausage. I thought more meat was needed but that could be because of extra ingredients I added. Along with browning the ground turkey I added minced garlic and diced green pepper. Spices I added were garlic powder, parsley, oregano, salt, pepper, fennel and crushed red peppers. After the cabbage was fully cooked I added cooked brown rice. I used the sour cream but I am not sure what it really added to the overall taste so next time I will leave it out. Sprinkled parmesan cheese on top before serving. I wasn't sure what my husband would think of this but he really liked it and got seconds. Will definitely make again.

Asian Turkey Barbecue on Sesame Scallion Toasts

I thought this was really good and so quick and easy. Since other reviewers suggested decreasing the amount of BBQ . I reduced the amount which in turn made the mixture a little too sweet. I think next time I will add a little bit more BBQ sauce but still not the full amount. Unfortunately I didn't have green onions but next time I will make sure to have some because I think that will taste great. I served over rice and added a little soy sauce.

Cajun Pasta Fresca

This was very good and healthy. I did make a couple of changes just because of what I had available. I didn't have roma tomatoes so I diced up fresh tomatoes and used V8 juice in place of liquid from the canned tomatoes. I also added a sweet red bell pepper & onion and sauteed those with the garlic. I didn't have mozzarella cheese so just sprinkled Parmesan cheese on individuals plates. I cooked blackened chicken (like another review suggested) along with this. My husband really liked this and it is hard to cook something that he really likes and asks me to make again.

Bacon and Macaroni Salad

This is great. I made a few minor modifications; used fat free plain yogurt in place of the mayo (I don't like the plain yogurt by itself and I really like mayo but mixed in with other things it is hard to tell a difference), no olives, added cilantro, used turkey bacon, and just because my husband likes spicy food I diced up a fresh hot red chili pepper. I started out added the dressing slowly as other suggested but ended up using it all. Also as others suggested I didn't add the bacon and egg until ready to serve. Very good, will defiantly make again.

Very Veggie Lasagna

I had a bunch of veggies I wanted to use up so I found this recipe. Below are the changes I made. I only made the changes to work with what I had on hand, not because I think it needed changes. I didn't have zucchini or squash but I did add red and green pepper. I cut up the peppers very small so that they would get cooked all the way (not sure that was necessary but they turned out great). I didn't have any ricotta cheese and only 15oz fat free cottage cheese. Plus I didn't have mozzeralla cheese. I added a little bit of sour cream to the cheese mixture in place of ricotta cheese. I did add a couple of swiss cheese slices. I also added double the sauce ( I could eat spaghetti sauce alone for dinner so I love it, thats the only reason I added more) and 4 cans of stewed tomatoes. It came out runny but I didn't mind at all. The lasagna turned out great. I think next time I make it I will ground turkey or Italian sausage. I hate to add it because it adds so much extra fat.

Luau Chicken Sandwiches

This was very good. I wasn't able to grill the chicken or pineapple so I think it will be even better grilled. Next time will grill for sure. I thought the dill/mayo sauce sounded kind-of weird to pair with the pineapple but it was great. In stead of mayo I used fat free plain yogurt. Very good!

Corn Noodle Casserole

I didn't give this 2 stars because it was gross(it wasn't), but because it was extremely bland. I read through all the other reviews and tried to combine them into the dish I made. So I added veggies (I used red and yellow bell peppers and onion) and an extra can of cream of mushroom soup. I cooked those with the ground turkey. I also added garlic powder, crushed red pepper and parsley. I didn't cook the noddles ahead of time. In a bowl I mixed the turkey mixture, uncooked noodles and 1cup of plain yogurt. I dumped that all in a baking dish and added water to cover the noodles. I cooked for 20min and than stirred/pushed down the noodles so that they all got fully cooked. Than I cooked another 30min and topped with mozzarella cheese at the end. It was still very bland. It might not be fair to rate this recipe 2 stars since I made a fair amount of changes but I don't think it would have been any better or more favorable if I followed the recipe exactly. I didn't want to throw out and waste all the food so I sampled it with BBQ sauce, A1 sauce, and hot sauce (not all at once but each individually). It helped somewhat but still not great. I won't be making this again.

Italian Spaghetti Sauce with Meatballs

This is amazing!! I didn't have ground beef so I used 1/2lb of ground turkey and 1/2lb of spicy italian sausage. I mixed the two meats together and used the same measurements for the rest of the meatball ingredients. This was the first time I had made meatballs and my husband loved them. The sauce was great. I added an extra 14oz can of tomatoes and used a mixture of diced and stewed tomatoes as that was what I had on hand. We had company over when I made this and I have never had people rant and rave about my cooking until this dish. I am now going to make this be my specialty for when we have company over.

Addictive Sweet Potato Burritos

These are really good. I wanted to give them a try but was a little unsure about them so I had a backup dinner plan if they didn't turn out well. They were easy to make and turned out great. A few changes made just because of what I had on hand.... I didn't have an onion so I used dry onion flakes, no chili powder so I used a little extra cumin and used Italian cheese blend mix. Will defiantly be making these again.

Pizza Casserole

This is great!!! I used turkey pepperoni and ground turkey instead of lean meat. I also added some hot Italian sausage ground up. Next time I will leave out the ground turkey add extra ground hot italian sausage. I had to use spaghetti sauce because I didn't have pizza sauce. I used a full jar of sauce but that is just personal preference. Very additive, everyone loved it and we all over ate.

Grandma's Best Ever Sour Cream Lasagna

This was great!! I was craving lasagna and didn't have ricotta cheese or cottage cheese so I decided to give this a try. I normally use the "Worlds Greatest lasagna" (I think that is the title) recipe that is on this site and it turns out great. My husband didn't realize I made a different lasagna and he said he thought this was my best yet. I told him it was because it wasn't the same recipe. A couple of things I did different which was just because of what I had on hand was.... used ground turkey (full pound) rather than ground beef. I used hot Italian sausage instead of pork sausage. I also used extra spaghetti sauce and swiss cheese. I added more seasoning because the sauce I had on hand was really bland. I added fennel too. Left out olives. Overall I don't think any of these changes really made a big difference. I think the recipe would be great if followed exactly. I will definitely make again. Might try same recipe with cottage cheese just to see if it is so good because of the sour cream or if it is the overall recipe that is great.

Barbeque Halibut Steaks

I put all the ingredients (except fish of course) into a microwave safe dish and microwaved until butter melted. I stirred it up real well dumped in a zip loc bag along with my fish and let it marinate for a couple hours. I baked the fish in oven and it turned out great. I am not a big fan of fish but I really liked this. I used it on Ahi Tuna and Yellowfin. The fish was just in frozen section at the grocery store -- nothing fancy. I will also use this on chicken and pork.

Asian Crab and Cuke Salad

This was very good, easy and healthy. It was a bit salty but I think it was because I doubled the vinegar and soy sauce to account for the extra crab meat I had. Also I dipped Wheat Thins into the salad which also had salt on them. I added a little bit of ground ginger. I will make this regularly especially in the summer. I think it would be good as a dip with cream cheese and avocado (there goes the healthy part). I am looking for suggestions of how other people served this salad. Update: I have made this a couple times now and each time I reduce the soy sauce and vinegar. The crab and cuke at the bottom of the dish get very strong soy sauce/vinegar taste from soaking up the juices. It becomes too strong to eat if it has sat for 1 to 2 days or so. So watch out how much you use.

Easy Southwestern Salad Dressing

Spicy Mexican Salad

This was really good and easy. I added ground turkey (cooked w/ taco seasoning), green onion, jalapenos, corn, and dark red kidney beans instead of pinto beans. I only made these changes to use up some stuff I had. I didnt have catalina so instead I made a dressing I found on here called "easy southwestern salad dressing", which consists of ranch dressing and BBQ sauce. It turned out great. Next time I will make sure I have catalina because that is my favorite dressing.
