Perfect Summer Fruit Salad

This turned out really good. I didn't have orange or lemon zest and didn't have oranges plus forgot the banana. I think if I had all of these it would have been better. Either way it would/was very good. I will make again. Oh yeah, I did add honey dew melon and that soaked up the sauce and tasted really good.

Eggplant Parmesan II

SO GOOD!! I made two minor changes: 1. I left out the parmesan cheese to save a little on calories and 2. I threw in cooked chicken breast strips before baking 3. added garlic powder 4. I added dieced fresh tomatoes b/c I needed to use them up. I just finished eating this and I still want more but I am too full. It was really good. I didn't bother with salting the eggplant to drain it out. It was a tad bit runny but not bad and to me not worth the extra time.

Cucumber, Tomato, and Red Onion Salad

This turned out good especially for hot summer days. I fill like it needed a little something extra. It tasted like exactly the ingredients so I don't know why I expected more. I liked the recipe because it wasn't soaked in a dressing mixture but now I feel like it need some sort of lite dressing or maybe more seasonings.

Spinach Brownies

These turned out really good. I followed the advice of other reviewers and used to bags of spinach, saute the onions, added garlic and crushed red peppers. I also only used 2tbsp of butter. Great easy side dish. Will be making again. Another version: I realized I didn't have enough spinach and I had other veggies to use up so I saute diced up zucchini, squash, red bell pepper onion, and garlic. Used fat free cheddar cheese. Than follow everything else exact and same measurements (expect spinach.. only had a 6oz bag) and it turned out good. My husband like this better because it was so spinach. I like the original recipe better but this is a good way to use up some fresh summer veggies.

Judy's Strawberry Pretzel Salad

Mine did not turn out so great but I am still giving it 4 stars because I have had this when someone else made it and it was really good. My mistakes/changes: I added a little bit more pretzels because they didn't seem to cover my 9x13 dish. I should have crushed the pretzels much better. I also reduced the sugar to 1/2 cup. My beater isn't very good and I thought the cream cheese and sugar was well mixed but when I folded in the whip topping I realized there were a bunch of little chucks. There seemed to be an over powering taste of cream cheese ..... and I LOVE cream cheese and didn't know there was such thing as over kill of cream cheese. But I think it was purly because of the chunks.I used fat free cream cheese and lite whip topping. I let the jello/strawberry mixture sit for an hour before putting it on top of the cream cheese/whip topping layer. However when I pulled the jello out of the fridge it has already set so I had to dump jello chunks on top of the cream/whip topping. I still ate some of it and it was pretty good. My husband said it was better than he expected b/c he thought the ingredients sounded weird together. I will probably try again or maybe request my mom make it :)

Grilled Lemon Herb Pork Chops

This turned out really good. I let the pork marinade for 3hrs. The Pork medallions I had were pretty thick so unfortunately I over cooked them a bit. I will use this recipe again but next time watch the grill a little closer.

This was good but not amazing. My chicken did turn out really juicy. I used chicken breast because I didn't have legs. That might have made a difference.

Tortellini Salad

Great!! I used turkey pepperoni and didn't add any extra salt because the pepperoni was salty. My package of tortellini was not as large as this recipe calls for but I kept the quantities the same for the dressing and the "toppings" and it was perfect amount. Next time I make it with the right quantity of tortellini I will increase the amount of dressing I make. I used shredded mozzarella cheese and next time I will make sure to get a block of cheese and dice it like the recipe instructed to do.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

These are dangerously good. My husband loves cookie dough so I made these for his birthday. He loved them. One note to make: I used a dark chocolate fudge cake mix and I think that the cake flavor over took some of the cookie dough taste. Next time I will use a more mild/bland cake mix.

Easy Sugar Cookies

These turned out great. I melted the butter in the microwave before mixing with sugar. The only thing I will do different next time is reduce the amount a butter. The cookies were a little more buttery tasting than I would like..... but still GREAT cookies

Cajun Chicken Pasta

This is great!!! I used a bag of frozen red, green and yellow bell peppers. Cooked the same way/time as this recipe directs. Didn't have heavy cream so used low fat sour cream. This is will defiantly be a regular meal I make.

Farmer's Market Vegetarian Quesadillas

UPDATE: I just made these again last night but on the grill. They turned out great. I put red peppers, muschrooms, and onions in foil with very little olive oil and some seasonings. Directly on the grill, I put zucchini and squash. I brushed them a little with balsamic vinaigrette in the middle of cooking b/c I realized 1/2 way through they were drying a bit and needed something on them. I don't know how long I kept them on the grill. I just watched them closely and turned when one side started looking done. After flipping the zuchnni and squash over I put the tortillas on the grill (over low heat). I put some cheese and cilantro on one side and added the veggies than a little more cheese and dropped the other tortilla on top. It was hard to fill over and a bit messy but it turned out really good. These are great! I followed the recipe to the T except left out the olive oil. I had trouble flipping the quesadillas over so both sides were brown but they still turned out excellent. I served these with salsa. I also added garlic powder, black pepper, and crushed red pepper to veggies.

Udon Peanut Butter Noodles

I first want to say that I didn't have all the ingredients so that could be part of why I only gave it 4 stars. I used chicken breast. I boiled the breast than shredded... taste great. I do not like honey so I left that out. I didn't have red peppers which I think if I did this recipe might have been 5 stars. I added carrots which turned out good. If I make this again I will add carrots along with the red bell pepper. I only had dried cilantro which I couldn't even taste so next time I will make sure to have fresh cilantro. I had hot chili oil which gave it a nice kick. I saw a similar recipe that added a splash of lime just before serving.

Beef Nacho Casserole

My husband loved this. I followed some of the other reviewers suggestions but I don't think some of the changes should be made..... I used rotel tomatoes instead of salsa. Next time I will defiantly use salsa. I used taco seasoning and chili powder abt 1.5tbs. I added black beans and had to use frozen corn since I didn't have any canned corn. Instead of the creamy salad dressing, I used 3/4cup of fat free plain yogurt and about 2tbs of light sour cream. It tasted great (I don't care of plain fat free yogurt by itself) but I would like it a little creamier. So I will probably use 1/2c yogurt and 1/2cup sour cream since the sour cream is thicker. I cooked green onions with the ground turkey. All in all it was very good. I think it would be great exactly as the recipe is written but I wanted to make it a little healthier. By the way, the chips stated crunchy. I was afraid they would get soggy but they didn't.

Apple Cole Slaw

Very good but time consuming. I will defiantly make this again for a party but it takes too much time to make for just me and my husband. I used fat free plain yogurt instead of mayo. Follow the advice of other reviewers and sprinkle salt on the cabbage and let sit to help "dry up" some of the extra liquid. Additionally, put lemon on the apples while cutting them to keep from turning brown. Still use the original amount of lemon for the dressing. UPDATE: I wouldn't spend the time with adding salt to the cabbage to soak some of the water up. Just serve with a slotted spoon. Two days later, still eating it. Everything is still crisp. Very good and still looks great.

False Cabbage Rolls

This was very good. I made a couple of changes based on what I had and other reviews. I had spaghetti sauce to use up so I used that rather than tomato soup. I also added two cans of diced tomatoes. Next time I will use the tomato soup along with at least two cans of diced tomatos. I used ground turkey and next time I will use 2lbs of ground turkey or1lb ground turkey & 1lb ground sausage. I thought more meat was needed but that could be because of extra ingredients I added. Along with browning the ground turkey I added minced garlic and diced green pepper. Spices I added were garlic powder, parsley, oregano, salt, pepper, fennel and crushed red peppers. After the cabbage was fully cooked I added cooked brown rice. I used the sour cream but I am not sure what it really added to the overall taste so next time I will leave it out. Sprinkled parmesan cheese on top before serving. I wasn't sure what my husband would think of this but he really liked it and got seconds. Will definitely make again.
