PHILADELPHIA Vanilla Mousse Cheesecake

This is an excellent recipe for cheesecake that even a first time cheesecake maker can make successfully. I topped mine with a singel layer of blueberries with a simple glaze. It was a hit, and there were absolutely NO leftovers! *** Made it again and topped it with red raspberries... made a lovely presentation.

Apple Pie by Grandma Ople

This was a simple, tasty apple pie recipe. Because Granny Smith's take so long to cook, I partially cooked them in a pot on the stove before I put them in the pie crust. This method produced the best results I have ever had with GS apples, and reduced the oven time.

Blackened Tuna

This was my first attempt at cooking fresh tuna steaks, and it was a huge success. Even the fussy eaters in our home enjoyed it! We follow a low sodium diet, so I used the following recipe to make a sodium free cajun seasoning: 1 Tbsp garlic powder, 1Tbsp onion powder, 2 tsp white pepper, 2 tsp black pepper, 1 1/2 tsp ground cayenne pepper, 2 tsp dried thyme, 1/2 tsp dried oregano. As other reviewers stated, the tuna smokes as it cooks. It also gets quite black, but it is not burned... the blackening adds a delicious grilled flavore to the fish. Great recipe.

Good recipe... love the tarragon flavor. I used a low sodium tomato juice and omitted the salt... we follow a low sodium diet. Tastes wonderful!

Crispy Cucumbers and Tomatoes in Dill Dressing

Easy and quick to make. I used only about a quarter cup of finely diced red onion, and increased the dill to about a teaspoon. I omitted the salt (low sodium diet) and didn't miss it! Great recipe, thanks!

A good recipe... will definately make this again. We are following a low sodium diet, so I reduced the sodium in the following way... used unsalted butter, didn't add ANY salt (used Mrs. Dash table blend), and instead of a pre-made vegetable broth I used sodium free bouillion, water, and more Mrs. Dash.

Chicken Pot Pie IX

This is quite simple, and tasty. I bought two frozen pie crusts as a shortcut, made some sodium free boullion to reduce the salt, used frozen carrots and peas, and added some frozen hash brown potatoes. It was great. We ate the leftovers the next two days... and enjoyed them!

These cookies are precious! The dough has a very mild flavor, and the eggs make them a showstopper. Next time I might experiment and add butter flavor instead (to the dough).

Home-Style Brown Rice Pilaf

This dish was an excellent accompaniment to the chicken I prepared. The flavors were so well blended that the pilaf overshadowed the chicken! This dish would be a meal in itself if you added finely chopped cooked chicken.

Baked Honey Mustard Chicken

This recipe is quite good. I made it tonight with a few changes...as per the advice of some other reviewers, I omitted the basil. The mustard I used was quite strong, so I cut the amount in half, but I think I will use the full amount next time. I allowed the chicken to marinate for about an hour, and it came out tender and juicey. Also, I added an egg and some mayo to the mustard/honey mix to help combat the runny-ness problem that others complained about. It helped. I would definately make this again.

Apple Stuffed Chicken Breast

My son made this for us for dinner last night and it was quite good. He used Gala apples, and the flavor was delicate. I would be curious to try this one with a tart apple, just to add some kick to the flavor. Also, I think I might try it with a smoked cheddar. Definately will try this one again.

This is "soul food". The spices make it interesting, and even my fussy son enjoyed it. It was still great as leftovers! If you are in a pinch you can substitute the fresh tomatoes with well drained canned.
