Soul Smothered Chicken

This is simply delicious. I served it over quinoa . I did not have cayenne pepper or celery so did not use. I used olive oil instead of butter and just a couple of tablespoons. And I used leftover chicken from both chicken soup and baked chicken. Amazing for leftover chicken.

I used yellow cheese and cut the cream and butter, subbing some olive oil. This dish really needs to be served fresh and the party I was bringing it to was a few hours later so....

Delicious. I used beet leaves instead of spinach and fresh parsley instead of fresh basil as these were not handy. I did not want a dairy dish so I left out the cheese. I used dry Italian seasonings in place of some missing herbs. It was deliciously amazing. I did not use the wine but would be willing to try it.

Soft Onion Sandwich Rolls

There were great. Did not want these to be dairy. I used soy milk instead of milk and 5 tsp of dry yeast for a double recipe. I subbed oil for butter. I egged with whole egg not just yolk and baked longer than suggested. I wrapped each in foil and froze and rewarmed in my oven - tasted like fresh baked, they were amazing. They were not very heavy on the onion flavor though if that is what you are looking for. It was subtle.

Peppy's Pita Bread

PERFECT pita bread. With pockets! I would cut into less pieces to make pitas bigger. Also I cooled them in a ziploc bag (sealed) and not paper and that worked fine. Dont put on lowest shelf in oven unless you dont mind dark underside of pita

One Pot Tuna Casserole

While I thought this was delicious, for some reason it was not a hit with the kids. I did not have cream of mushroom soup and instead used some dairy whipping cream (not too much as I did not want to add all that fat) and more milk (I used one percent milk) . I reduced the amount of butter by quite a lot as well.

This was delicious. I used whole wheat bread instead of buns. I used yellow cheese instead of cheddar. Next time I would omit the onions and some of my kids picked them out.

Italian Fish Fillets

This was amazing. I used sole but next time would use a thicker fish as the sauce overwhelmed. I cut up my own tomatoes (6) instead of using canned. I added fresh mushrooms and instead of italian seasoning I used a packet of italian season dressing. I dont think I would use the mushrooms again. My kids ate this!

Cabbage Roll Casserole

We loved this and so did the kids- I will have to one and a half the recipe next time. I used marinara sauce that was spicy which gave it pizzaz plus a bit of tomato paste. I used turkey and chicken instead of beef. I baked in the oven for the amount of time noted and it was really yum! thank you.

Easy Pancakes

Perfect pancakes that are kid friendly. Made with soy milk and it was even better 'cause of added sweetness. Dad's double whole grain is a healthier alternative but these were more appreciated by my kids...

Penne with Pink Vodka Sauce

update: hadnt made this in a while and kids were requesting so I made it but this time I also added Italian seasonings as per reviewer as well as garlic powder and salt to taste. I also put in fresh mushrooms which was great though next time I would sautee them first as they are a bit soggy. Delicious!!!!!!!!!!!! This was deliciously amazing- like eating in a fancy restaurant! I sauteed three cloves of frosen garlic in olive oil, I used one 28 oz can of crushed tomatoes, 3/4 cup of cream and half a cup of vodka and that was perfect in amount and in taste. This also was soooo quick- it took five minutes.

Easy Morning Glory Muffins

DElicious. I made them as follows.I used one cup of whole wheat flour and one regular. I also did half cup brown sugar and half cup white.I used a quarter cup of coconut. I put in a handful of craisins instead of raisins and two handfuls of chopped dates which really added a lot. I used 3/4 cup canola oil and 1/4 cup of soy milk. Other than that I used what the recipe called for. Oh- I also sprinkled in a ahndful of bran! The only thing I would change next time is that I would puree the carrot instead of grating it cause I like that consistency better. This was a hit with theh kids! Thank you!

Best Ever Muffins

These are really yummy- a good basic muffin recipe. I gave four stars because it is very basic, kind of bland on its own- you need to do something with it in order to make it into something exciting and I left these plain. I am going to ice these for my son;s school party and I think this was the perfect recipe for that.
