Baked Teriyaki Chicken

I cook my chicken right in with the sauce..8 chicken thighs halved at 425' for 1/2 an hour. (turning half way) Serve over rice. Delish!

Garlicky Summer Squash and Fresh Corn

Instead of using chicken broth, I sprinkled chicken flavoured buillion and then added 1/4 cup water. Squash is naturally high in water content so you don't need much liquid. Amazing dish that compliments chicken or fish!

Cucumber-Mango Salsa

What a fantastic refreshing salsa! Use English cucumbers (seeded) because they contain less water and it won't end up too watery after you add the salt. (salt draws liquid out from the cucumbers). I also added diced peaches and/or nectarines for a little bit of a different flavour and it was delicious! Make sure you serve this salsa with Lime Flavoured tortilla chips..it makes all the difference!

Just like my Oma used to make! I use real butter instead of oil and it tastes even better! Serve with a German bratwurst and you've got dinner!

Crazy Cake

As a mom of a son who's allergic to eggs and milk...thank you so much!! What a great recipe. The only thing I changed was I added 1/2 cup brown sugar (because the first cake I made just wasn't quite sweet enough). The addition of the brown sugar was perfect! The cake even holds together. (try making a cake with no eggs..falls apart easily) I made a Spongebob cake and iced it with (vegan)buttercream icing and it was a HUGE hit at my sons birthday party.

Winter Fruit Salad with Lemon Poppyseed Dressing

This is honestly one of my favorite salads of all times. I don't like swiss cheese so I shred mozzerella cheese and it's fantastic. I've been making this salad for special family meals for years now and it's always a hit.

Romaine with Garlic Lemon Anchovy Dressing

AMAZING dressing! I prefer my dressing a little chunkier so I finely chopped my anchovies and didn't blend them. I also used 4 garlic cloves instead of the one. I love garlic!!

Great recipe! I've used canned beets and it turns out just as great. I tweaked it a bit and added more garlic and 1/2 tsp of sugar to compliment the vinegar.

Candied Sweet Potatoes

These are to die for! I make these sweet potatoes every holiday we get! :) Make sure you boil the sweet potatoes until just a tad bit under done. That way when you cook them in the butter and brown sugar, they'll cook the rest of the way there and not break up and turn to mush. edited to add...you need to add another 3/4 cup brown sugar to make the sauce not runny. I also cut the orange juice a tad too.

What a great recipe! I changed it a tad though..I added diced mangoes, ripe juicy pears and black berries. Toss your apples in a tsp of lemon juice to stop them from browning. The tartness is wonderful!

My mom is from the Philipines and made this all the time. It's exactly how she made it except no potatoes which you don't really need since it's served over rice. Great recipe!

Beef Barley Vegetable Soup

I gave this 4 stars because I tweaked it quite a bit. I used stew meat cut into really small cubes and browned them in oil with garlic and onions. I added 1/4 cup red wine and reduced it. I put the meat into a large pot and added diced carrots and celery, 2 tetrapacks of beef broth, 1/2 tsp marjoram, 1/2 tsp thyme, 2 tsp beef buillion (instead of salt) and 3/4 cup pearl barley. I brought it to a boil and covered the pot and simmered for 1 hour. I then added 1/4 cup flour (shaken in 1/2 cup cold water to eliminate lumps) and added it to the soup to thicken it just a bit. I was DELICIOUS and my 3 kids had 2 helpings each!

Vegan Chocolate Cake

My son has a dairy and egg allergy and this is the first cake I have found that doesn't use egg replacers. ( I don't like the after taste of it!) I added a tsp of baking powder the 2nd batch I made and they came out a bit fluffier. I also substituted 1/2 the white sugar for 1/2 brown sugar and the taste of my second batch was much better.

One Skillet Pork Supper

I had to play around with the seasonings with this recipes otherwise it would have been too bland. I added minced fresh garlic, 1/2 chopped onion, 1 tsp italian seasoning and 1/2 tsp celery salt. THEN it was great!

I should have read the reviews before making these. The reviews that gave the best ratings were the ones that didn't use "biscuit" dough. I did and they came out soggy and unappealing.
