Blueberry Pie

I added more cornstarch..like everyone suggested..and it still was really runny. The taste was fantastic tho..will make again and try more thickener.

THE Pasta Salad

Made recipe exactly except didn't have peas so chopped broccoli very fine and added it. Very good and everyone like it. Next time I may throw in sliced black olives too.

Aunt Carol's Spinach and Fish Bake

I've made this several times this past year and its always delicious and a welcome dinner night as our house. I've always use fresh spinach (instead of the frozen)..just saute it until cooked as much as you like it in a little olive oil before assembling it with egg, etc. We use Tilapia with it...super easy and yummy!

Slow Cooker Chicken Taco Soup

Oh my! So yummy, warm and satisfying! SUPER EASY and fast. My favorite soup is Taco Soup made with beef but this is just as good! I added some cayenne pepper for a little kick but recipe was made 'as is'. My mouth is watering as I type this....slurp!

Moroccan-Style Stuffed Acorn Squash

Excellent dish! Used all veggies as recipe called for but added chopped zucchini as well. I don't really like raisins except for eating plain but they really made this dish! Next time, I'm adding MORE raisins than called for and adding crushed peanuts or cashews sprinkled on top for some crunch. Thanks for this awesome recipe!

Tofu Parmigiana

Yummo! I did take several reviewers suggestion and froze the tofu...then baked it instead of frying. The texture turned out similar to a 'chicken nugget'. I used a can of spaghetti sauce instead for convenience. My family LOVED it! I think I'd keep a little sauce in a pan, on the stove top, to add to the spaghetti for people who don't like it so dry.

Orange-Ginger Tofu Triangles

Made this as the recipe stated and it was good! I will make it again but with modifications. First, make sure you have EXTRA firm tofu. I didn't and it was a little mushy. Also, I'd add some brown sugar to taste and cut back on the oil. I've made tofu before and if you like more of a 'chicken nugget' texture..freeze the tofu before marinating it. All in all...a good recipe to tinker with!

Best Spanish Rice

In our opinion...the BEST spanish rice recipe out there! We've made it a dozen times or more and its always satisfying. If you like it really spicy...exchange one cup broth for 1 cup salsa to give it more kick.

Kitty Litter Cake

My 8th grade daughter took this as an object lesson for school. She had to demonstrate 'something' and she spoke on how to clean a kitty litter box for her example...using this edible cake. a BIG hit with the students and teacher as well. She got an "A"! but grossed everyone out when she ate one of the 'poop-ies' at the end of her talk!
