Seven Layer Dip

Excellent! Although I made some modifications. In the bean layer, I left out the peppers, and added a 1/4 c. or so of chili sauce, and some extra chili pwdr and cumin. For the guac layer, I used only 2 avacados, which was plenty. I added some chunky salsa to the guac as well. I added a ~1/2 pkg of taco seasoning to the sour cream layer for some color and a kick of flavor. I don't like olives, so I drained a can of black beans and put about 1/2 on top for garnish. Overall, it was a BIG hit and everyone loved the flavors!

Apple-Filled Cranberry Muffins

These are SO yummy! I used apple sauce instead of the cranberry juice, and so the batter was VERY thick, but they turned out delish! Next time, however, I might just mix the apples into the batter, instead of using it as a "filling". I made a few in ramekins, and they made excellent individually-sized dessert cakes...warm up & serve with ice cream - YUM!

Take The Night Off Slow Cooker Pineapple Chicken

Good flavors, but could use some more spices. I did add about twice the soy sauce because we use low sodium soy sauce. I used boneless chicken thighs, which kept the meat moist. Does not need to cook as long as the recipe says. Next time I'll add some garlic & salt & pepper, and cook on the low setting for only 2-3 hrs.

Spanikopita

I added 2 eggs & put in about 1.5 c feta (no mozz or parm), and threw in some extra seasoning -- a little nutmeg, some dried onion, oregano, etc. And I rolled them up into little "cigars". Very yummy!

Chunky Pecan Bars

Very rich & yummy. Made them for a party & got great reviews. Chill before cutting so they don't break apart, and then cut them small...they are very rich & chocolate-y! I mentioned that I might cut down on the chocolate the next time, and all the guests cried out "NO!!"...so I guess I won't. :) Helpful note...I didn't have dark corn syrup, but I found the following substitution for it online...1 c white sugar + 1/4 c water + 1/4 c molasses....and then I just used 3/4 c of that mixture.

Warm Apple Compote

I used this on a pumpkin spike cake ("Easy Pumpkin Muffins", but baked in 9x13) last night & it was delicious. I used dried blueberries (because I had run out of dried cranberries & don't keep raisins on hand). The recipe doesn't say how much water to use...I used about 1/2 - 2/3 cup. I also cooked it down a lot longer than this says....I wanted the apples really soft & for it to be a bit "saucier" to spoon over the cake.

Raspberry Peach Crumble

I was really looking forward to making this recipe, but was a little disappointed. Too much butter! And maybe my ramekins are smaller than others...but the filling ran out all over the sides & onto the pan. Very soupy...would cut out the juice and some of the sugar in the fruit. And cut down on the butter. Next time, I'll probably make it in a large pan, instead of the ramekins.

Mixed Fruit Crisp

Didn't care for this recipe. I LOVE fruit crisps, but the banana flavors just did not work. I also would not recommend adding the water to the fruit...it made the fruit too soupy after baking. The topping was bland.

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

Made this without the port sauce (because we had no pan drippings), and it was still delicious! Loved the combination of sweet and savory flavors. I used apple butter instead of apple jelly because I had it on hand, and it was a very rich flavor.

Pita Chips

Excellent chips! I made these last weekend for a Christmas party. Instead of cutting the pitas into wedges, I used metal cookie cutters & cut them into holiday shapes -- trees, holly leaves, snowmen, stars, bells, & gingerbread men. They were a BIG hit! I'd suggest leaving the salt out of the oil mixture, and instead sprinkling on a little kosher salt just before baking -- you'll get a more even and controlled coverage.

Tortellini Salad I

Very good! I left out some of the things I don't like (olives) or didn't have (mint, feta), used dry seasonings (didn't have fresh parsley), and added more veggies (shredded carrot, broccoli, etc). Served it at a family gathering, and everyone loved it...even the kids who hate all veggies!

Anytime Punch

I have made this for several parties, and it's always is a hit. It'll go faster than you think, so bring more supplies to replenish during the event! I used raspberry sherbet, left out the champagne (let people add their own booze), and tossed in some frozen raspberries to pretty it up. I also made an ice ring with some raspberries in it to keep it cool throughout the party.

Easy Pumpkin Muffins

Delicious and so moist! I used Pillsbury sugar free yellow cake mix (no one would have known), and it was fantastic! I made this in a 9x13" pan, but will do muffins or mini-muffins next time for portion control. Made "Warm Apple Compote" from this site to serve on top. So yummy & a great way to welcome autumn!

Chicken Cordon Bleu II

This is so easy & so delish! Used the full-fat ingredients only because we happened to have them on hand. Next time I'd use low-fat swiss & make the gravy with milk instead of cream...but only so I could feel less guilty about having dessert afterwards! :)

Frikadeller (Danish Meatballs)

My husband & I went to Scandinavia for our honeymoon last year, and have been looking for a recipe for the meatballs we loved while over there. This comes very close, but we used the sweet/savory spice suggestions from another recipe here (ginger, nutmeg, allspce). Made a gravy with the pan drippings & a little cream. Ate them with lingonberries that we brought back with us. Awesome!

Swedish Meatballs (Svenska Kottbullar)

My husband & I went to Scandinavia for our honeymoon last year, and have been looking for a recipe for the meatballs we loved while over there. This comes very close...we LOVE the sweet/savory spices in these! Adapted a little based on what we had on hand--dry onion flakes, a little bread crumbs instead of bread, used a little seltzer in the meatballs (got that from another recipe here), and used a little cream in the gravy. Ate them with lingonberries that we brought back with us. Awesome!

Chicken with Lemon Sauce
