Quinoa with Peas

Southwestern Egg Rolls

These are the best! I took the advise of others and used a store bought roasted chicken. Left out the onions and baked them instead of frying. Served with sour cream and salsa on the side. Great for dinner or an appetizer.

Tasty Lentil Tacos

This may be my favorite meal ever! It was so easy to make. Used garlic powder instead of fresh. Doubled the recipe and used only a sprinkle of cumin. Took advise from others and left out the salsa and put it on the table to be added with all the other toppings. I will make this again and again!!!

Texas Hash

This is a delicious, easy-to-make, inexpensive dish that goes a long way. Used brown rice instead of white, a little less onion and omitted the green pepper (and glad I did upon tasting the end result). My diced tomatoes already had green chilies in them and as per others suggestions, I added one can of black beans. Used shredded Monterey Jack cheese for the top. So good! Makes a lot and we ate it all week until it was gone. I can see this being good made into a burrito with some sour cream and jalapenos! Great recipe!!

Beef Cabbage Hash

Easy and really tasty. Doubled amount of ground beef, (sprinked with paprika, garlic powder and a little red pepper flakes while browning). Used five medium potatoes that were peeled and sliced. Six to seven cups of cabbage and one onion sliced. As suggested, used beef broth instead of water. Threw in a handful of grated cheese towards the end of cooking. Didn't look like it was going to wow us, but def did. Had to cook a lot longer than written, but well worth the time! Will make often!

Chicken Jambalaya

This is so good!! Quadrupled the recipe and still wish I made more. Left out the bay leaf, and thyme and subbed with oregano. Used turkey smoked sausage and a roasted chicken from the grocery store. Left out the shrimp. Also used diced tomatoes with chilis. Will make often!

Shepherd's Pie VI

Comfort food! Used ground turkey this time around, but love it with ground beef as well. Used a small onion finely chopped, ketchup, worcestershire and beef consomme. Instead of mashed carrots, I used frozen peas and corn and mixed it right into the turkey mixture. Layered the meat in the casserole, sprinkled a thin layer of shredded mont-jack cheese and topped of with Diner Choice Mashed Potatoes. Sprinkled with paprika and baked in a 350 degree oven for approx. 30 minutes. Really so good!!!

Sausage, Peppers, Onions, and Potato Bake

This was so very good. Ya think how could it be any differnet from regular sausage and peppers, but it is. The chicken broth really gives it a good taste. Used hot and sweet sausage. Will make again and again!

Sausage Stuffed Jalapenos

These were a hugh hit with my family. So easy to make and so good. Even the picky eaters who say they don't like jalapenos, thought it was tasty. My Dad said it was his favorite appetizer on Christmas Eve. Will make again and again!!!

Prune and Raisin Filled Cookies

This was too yummy for words and will be on every cookie platter I ever make. Will def double or triple the prune/raisin mix next time. Only lightly brushed the top with the lemon juice/sugar mix. Found it easy to make and really easy to eat!! Got thumbs up from everyone. Thanks so much for this wonderful recipe. My grandmothers would be so proud!

Quick and Easy Mexican Chicken

This was so easy and so good!!!! Seasoned my chicken with salt, pepper, galic powder, chili powder (as per others suggestions) and pinch of cumin. Cooke on stove top for approx 10 minutes, added salsa and mont-jack cheese and baked for about 30mins. Can't wait to make again!

Hot Corn Dip

Secret Burger Sauce

Very tasty I did alter as per my taste and others suggestions. Doubled the mayo and ketchp and pickles. Added less garlic powder and black pepper than called for. Also added cayenne pepper and a splash of white vinegar. Willl make again and again!

Pepperoncini Beef

This is my type of meal! Rubbed the chuck roast with salt, pepper, garlic powder and paprika and browned in a pan first. Also browned some onion. As suggested, added 1 can of beef broth. Cooked on low for appox 5 hours and pushed it to high for the last hour. Tasty, tender meat! Will make again!

BBQ Pork for Sandwiches

Made to serve at a party and got rave reviews! Used 6lbs boneless ribs, 2 cans of beef broth and Sweet Baby Rays BBQ Sauce. Followed others suggestions and added sliced onion to the bottom of the crockpot. Seasoned ribs with salt, pepper, garlic powder, and chili powder. Cooked on high for 7ish hours. Meat shredded easily. Added BBQ sause and put in frig till next day. Reheated in over. DEElicious!

Spanakopita II

ok... please don't anyone yell at me. i changed this recipe to be spanakopita my way, so maybe not really spanakopita anymore, but very yummy! sauteed some onions and added 2 boxes of frozen, squeezed dry spinach . seasoned with salt, pepper, and garlic powder. threw in grated cheese and 8oz of shredded mont-jack cheese. let the cheese melt. no eggs. filled mini phyllo shells and baked 10-12 minutes. beyond good!! spanakopita my way!!

Cabbage Sloppy Joes

This was super good! Left out the celery and lemon juice. Seasoned beef (while browing) with chili and garlic powder. Used extra cabbage and 1/2 ketchup, 1/2 tomato sauce and a dash of hot sauce. Really good and will be make often!
