Quinoa with Peas

Sarah's Applesauce

Used a mix of apples and red pears. A couple of packets of Truvia instead of sugar, recommended cinnamon and only a splash of water. Could eat the entire bowl!

Black Beans and Pork Chops

Had a good taste, but my chops came out dry. Next time I think I'll use country style ribs and throw them in the slow cooker. I seasoned my chops with salt, pepper, garlic powder, cumin and chili powder. Used diced tomatoes with chilies instead of salsa. Will try this one again.

Chicken Jambalaya

This is so good!! Quadrupled the recipe and still wish I made more. Left out the bay leaf, and thyme and subbed with oregano. Used turkey smoked sausage and a roasted chicken from the grocery store. Left out the shrimp. Also used diced tomatoes with chilis. Will make often!

Ed Zieba's Famous Family Pork Chops

Used a little less onion than called for and beef broth in lieu of water. Seasoned chops with salt, pepper, garlic powder and paprika. Really delicious!!

Secret Burger Sauce

Very tasty I did alter as per my taste and others suggestions. Doubled the mayo and ketchp and pickles. Added less garlic powder and black pepper than called for. Also added cayenne pepper and a splash of white vinegar. Willl make again and again!

Black Pepper Beef and Cabbage Stir Fry

This just needed something. It was good and easy to make and a meal right up my alley, but just lacked flavor. I used ground chicken and a couple of hot italian sausage (crumbled out of its casing) instead of beef. Loved the caggage in it. Needed extra soy sauce. Added corn and used beef broth instead of water. Will prob make again, but will amp up the seasoning and try it with beef.

Tuscan Soup

Doubled the recipe, used red potates (skin on and sliced) and half and half. Took others suggestons and drained the sausage after browning. Added some oregano, a couple of palm fulls of grated cheese and used baby spinach. Def was yummy but feel it can be better, a little more tasteful. Will add chopped garlic next time while browing the sausage. All in all a keeper!

Sweet, Sticky and Spicy Chicken

Although we enjoyed the flavor of this meal, I couldn't get it to get sticky. I may read some reviews and try it again. Def has a yummy taste.

I know I'm going against the majority (which normally doesn't happen), but felt this needed some more flavor. I did add extra garlic, broth and stewed tomatoes, but it was jus lacking something.

Spinach Stuffed Chicken Breasts

Very good! Was a little work. Had trouble stuffing the chicken and keeping it closed. Used many toothpicks. =] Opted for fresh spinach sauteed in a little olive oil and sprinked with garlic powder, salt and pepper. used mont/jack cheese for this dish. Browned the bacon first, removed from pan and browned my chicken in the bacon dripping before baking. Next time will take others suggestions and pound out chicken and roll. Will make again.

Pumpkin Pie for Dieters

This is def a keeper. Changed it a bit due to ingredients on hand and others suggestions. Used pure pumpkin instead of puree. Added skim milk, cinnamon, a little vanilla and splenda. Used instant banana pudding instead of vanilla (all I had) and folded in some Reddi-Wip whipped cream. Let is set for and hour or so. More of a mousse consistency. Will add a little bit more pudding next time to get it to thicken a tad more. So satisfying for a low-cal, low-fat dessert.

Sicilian Lentil Pasta Sauce

I'm on the fence about this one. I added a lot more seasoning, and it was still kind of tasteless. Wanted this to be good so bad. Always looking to eat more lentils. Even used chicken broth instead of water. May give it one more try.

Zucchini Cornbread Casserole

This was pretty good. As per others suggestions, I salted the zucchini and let it sit for about 15 minutes and then removed as much liquid as I could. Used mont-jack cheese because it's what i had on hand. Will def make again.

Chicken and Corn Chili

Great dish! Here's what I did. Used seven breats that I seaonsed and lightly browned. Sauteed some onions as well. Used one 24oz jar of salsa, one can of diced tomoates with chili's, one 8oz can of tomato sauce and half a cup of chicken broth. Used additonal seasoning and added one can each of pinot and cannelli beans with a little bit of their juices. Cooked on high for 4 hours, shredded chicken and cook for another 30 miniutes. Very tasty!

Cabbage Sloppy Joes

This was super good! Left out the celery and lemon juice. Seasoned beef (while browing) with chili and garlic powder. Used extra cabbage and 1/2 ketchup, 1/2 tomato sauce and a dash of hot sauce. Really good and will be make often!

Spanakopita II

ok... please don't anyone yell at me. i changed this recipe to be spanakopita my way, so maybe not really spanakopita anymore, but very yummy! sauteed some onions and added 2 boxes of frozen, squeezed dry spinach . seasoned with salt, pepper, and garlic powder. threw in grated cheese and 8oz of shredded mont-jack cheese. let the cheese melt. no eggs. filled mini phyllo shells and baked 10-12 minutes. beyond good!! spanakopita my way!!
