Cooking makes me happy. It's how I relax and get creative. I work in a firehouse and am use to cooking for groups of men, anywhere from 8 to 12 guys at a time and love it!! My grandmothers motto is "If you didn't have leftovers, you didn't have enough". =]

Chicken Jambalaya
This is so good!! Quadrupled the recipe and still wish I made more. Left out the bay leaf, and thyme and subbed with oregano. Used turkey smoked sausage and a roasted chicken from the grocery store. Left out the shrimp. Also used diced tomatoes with chilis. Will make often!

Ed Zieba's Famous Family Pork Chops
Used a little less onion than called for and beef broth in lieu of water. Seasoned chops with salt, pepper, garlic powder and paprika. Really delicious!!

Blonde Brownie Nut Squares
Had such high hopes for this recipe especially with all the great reviews. I just didn't like them. Didn't come out chewy and gooey and were kind of tasteless.
