Roasted Beet and Potato Soup

Have to say, I hate it when someone rates the recipe after altering it but here I go (was trying to use up leftover misc things in my fridge from Christmas). First off, I used an acorn squash in add'n to the potato and beets (roasted as directed). I used leeks instead of the onion. For the chick broth, I used 1 cup chick broth (all that I had left), 2 cups vegetable broth and 1 cup white wine (btw-"Better than Bouillon" is awesome). For the milk, I used 1 cup hvy cream and 1/2 cup 1% milk (what I had on hand). This was EXCELLENT but rich. Will make again :)

This was very good...added the uncooked pasta and a bag frozen chopped spinach during last 15 mins of simmer time...Next time will only use half the pasta.

Garlic-Shrimp Angel Hair

Very good...the sauce was perfect, I've made other alfredo based meals before and found the sauce too rich...I also only used half the suggested hot sauce and it was the right amount of spice for me.

I have found MY drink...perfect and soo easy to make! Tweaked abit, not a fan of strong alcohol taste: 3/4 oz vodka, 1 1/4 oz each pineapple juice and malibu shaken with ice, strained with a splash of grenadine (actually double ingred. for a serving)...a must make!

Classy Green Bean Casserole

This was pretty good...and terribly easy (have another green bean recipe that I use that is awesome but has so many steps I dread preparing!) Used fresh green beans (parboil for about 3 mins, then blanch). Will make again!!

This is a great rib recipe, however next time I will use less sugar (a bit too sweet) and will cut sauce by a third (made way too much!). Also, 2 lbs just isn't enough for 4 people-of course, maybe we're just rib piggies! Actually used 4 lbs and it was just right.

Cafeteria Macaroni and Cheese

A good recipe, my 10 year old helped me make it. I followed the recipe exactly, used mild cheddar, and I liked the texture /consistancy. Next time I will try half mild and half sharp to see if it gives it any umph. Hard to find a recipe that doesn't call for processed cheese!

Dinner in a Dish

This was pretty good. I used turkey instead of the beef and it was fine. It did have a strong ketchup flavor so I might reduce next time. Overall though, a nice variation of shepards pie, and easy to make.

Meaty Mexican Sandwiches

Would have given a 3 1/2 rating, but since there are no half ratings, I rounded up...A fairly good sandwich. Not "mexican" at all. Basically a dry sloppy joe with nuts and raisins. If I make again, will maybe add a can of tomato sauce to make it saucier.

Pecan-Oatmeal Pancakes

These were good but "heavy", can't eat too many or you'll be sorry! When mixing up the batter, i didn't think they were going to turn out, but was pleasantly surprised. Easy to make, a nice change from plain pancakes. Next time i'll use a little less oatmeal and pecans, but brown sugar was perfect for just a hint of sweetness.

Grandmother's Buttermilk Cornbread

A good cornbread, but was a little more sweet for my taste(will cut back on sugar if i make again). Brought this to a potluck and people liked it (made mini and reg size muffins), convenient for grabbing!
