Skewered Potatoes

I used baby new potatoes and roasted them in the oven for 1 hour the morning of. When I got home I threw them in the marinade for 2 hours and we skewered them over our fire pit. They were a big hit!

Buffalo Chicken Dip

A friend made this for the Superbowl and it was great! We used fresh cooked chicken instead of canned and didn't put it in a slow cooker, we put it straight into the oven, which was fine.

Chocolate Cappuccino Cheesecake

I made this for a Superbowl party and it was a hit! I loved the creamy texture and richness of the cake. I baked it over a pan of water and it turned out perfect. The only changes I made were due to ingredients on hand. I used chocolate graham crackers for the crust and Hazelnut Kahlua instead of regular Kahlua. Based on that I also replaced the espresso with 1/8 c of water and an 1/8 c of additional Hazelnut Kahlua. I will definitely make this again, exactly as I did this time. My husband was very happy!

Orange Pecan French Toast

I'm not a fan of french toast but this was amazing! I followed the recipe almost exactly, though next time I will sub maple syrup for the corn syrup, just because I don't care to use corn syrup. The only other thing I did different was I didn't measure the orange zest. I used 3 large oranges for the juice and I used all the zest off the oranges, which may have been more than what was called for, but I would do it again. I've made this twice for weekend company and it was a huge hit, with everyone asking for the recipe.

Cornbread Salad

I love this salad! I had never even heard of this until a friend brought it to a gathering and I immediately went searching for a recipe. This does the trick! I also have made a lighter version by tossing all of the vegetables over fresh spinach leaves and crumbling cornbread over top, serve ranch on the side. An excellent way to serve salad with mexican food. Must try.

Pineapple Angel Food Cake I

I love this simple recipe, but the big selling point is that it is low in calories. I often use low fat or fat free topping. One thing that the recipe should state is that this only seems to work with a name brand cake mix. That's very important to your success.

Blue Cheese Stuffed Mushrooms with Grilled Onions

This recipe was well received at a BBQ last night, however it was a bit salty for me. I also did a few mushrooms with goat cheese, because not everyone likes blue cheese. The goat cheese mushrooms were awesome. Overall very simple appetizer, which was great. Next time I may try cream cheese with jalepenos mixed in as the filling, along with more goat cheese mushrooms.

Ten Clove Garlic Marinade

Highly recommened marinade. I made this marinade for Delmonico steaks, which is my favorite cut of ribeye. The only thing I did different was to add a liquid tenderizer. I took the steaks on a camping trip and grilled them over the fire. One of the guys said it was maybe the best steak he ever had! Will definitly use this as my marinade of choice.

Yummy Honey Chicken Kabobs

I made this marinade for vegetables that I cooked over a fire when camping. It was very good, though subtle. I might try a little more honey next time, because I think the hint of sweet on fire grilled vegetables is absolutely wonderful.

Coconut Margaritas

I loved this margarita with two small changes. I added 1 1/2 oz lime juice to the mix. Then I mixed 1/8 tsp salt into the shredded coconut and toasted it in the oven and crumbled it before rimming the glasses with it (which I dipped in extra lime juice first). The house smells heavenly while your toasting the coconut, but be sure to watch it carefully. Must try!

Baked Potato Skins

The best recipe I have ever tried for potato skins. The only change I made was to use butter instead of oil b/c it's what I had on hand, and then I poured the remaining butter mixture over the pulp that I had scooped out. It was amazing! The parmesan really makes this recipe.

Chilled Marinated Asparagus

I made this as a side dish at a grill out. Awesome! We couldn't stop picking at it and the dish was gone, even though it made alot. I did not add as much oil as it called for, and I think next time I'll try seasame oil. Also I would recommend plunging the asparagus in cold water after steaming to retain the bright green color.

Pork Tenderloin with Mustard Sauce

I only use the marinade from this recipe, and it was fantastic. I was concerned about how it would turn out because I was making it for company, and it didn't smell appetizing right before I cooked it, but it was really delicious. I was making Pork Tenderloin with Dijon Marsala Sauce from this site and this marinade just sounded like a good fit. I highly recommend using this marinade with the Dijon Marsala sauce, although this mustard sauce is probably good, too.

Best Lemonade Ever

This really is the best lemonade ever! My husband loves it and he considers himself to be somewhat of an expert. I didn't go through the long process, however. I stirred it all together while still warm, then chilled, and I used lemon juice concentrate. I'm sure fresh lemons would be even better, but I don't have the time or patience.

Fig and Olive Tapenade

This is one of my favorite recipes. When I take it to a gathering it is always gone before the night is over. The only thing I change is I use dates instead of figs b/c they're easier to find. I'm not sure it makes a difference. Also I have made w/ or w/o thyme and I couldn't tell the difference at all.

Spinach and Orzo Salad

I make this recipe for parties every chance I get. It is always very well received, even by people who don't think they'll like it. I usually use rigatoni pasta b/c I think it looks more appetizing, and I always add tomatoes. I'll sometimes add roasted red peppers for variety, and I use balsamic vinagrette dressing.

A friend of mine turned me on to this recipe, which I've made many times. We've always added a packet of Hidden Valley Ranch dressing mix. I think it really makes a difference.
