Cinnamon Swirl Bread for the Bread Machine

I've made this a few times now and it comes out great every time. I love being able to use the bread machine to get most of the work done - it makes it a breeze. The flavor of this bread is terrific. The first time I doubled the sugar, butter and cinnamon as some recommended, but this made it too sweet and too sloppy. After that, I've just doubled the cinnamon because I love the flavor of cinnamon and like it really prominent in the bread. I don't use the walnuts out of personal preference and in recognition that the weight of the nuts will weigh the bread down. It comes out light, fluffy and is especially good when warm. If there are leftovers, try warming them up for a few seconds in the microwave. Yum!! Thank you for sharing this recipe!

General Tsao's Chicken II

Excellent recipe. You might be inclined to want to take short cuts with cooking the chicken, but following the recipe results in crispy chicken that keeps its crispiness even for leftovers the next day. Worth the extra step of frying twice. I did try it by replacing the sugar with equal amount of orange marmalade and loved that too (although perhaps that makes it orange chicken?) At any rate, everyone loves it and says it tastes even better than the chinese restaurant. ok, perhaps they are just being kind, but this recipe is good enough that I've made it quite a few times with hardly any changes.

Christmas Stollen

Awesome! (no that is not too strong a word to use for this!) This is the best stollen recipe I've ever tried. I made the dough in the bread machine on dough cycle. When it was all done, I added the fruit. Note: Since I didn't use marzipan, I soaked the raisins in Amaretto while dough was in the bread machine to give a touch of almond flavor. This worked really well. After I kneaded in the fruit, I formed it into a loaf, covered it, let it rise about an hour and then baked it per directions. If you have amazing self control, this tastes even better the next day after the flavors have 'matured'. Wonderful recipe that I will gladly use again and again. Thank you for sharing!

Fresh Broccoli Salad

Excellent salad - even better if you can let it sit for an hour or so to blend the flavors. I added 1/2 c. shredded cheddar because I just can't help myself and whenever I want to 'lighten' it up a bit, I use 1/4 c. light sour cream with 3/4 mayonaise to save a few calories. Wonderful summer salad with almost a cole slaw slant to it, but MUCH better!

Tasty Fried Eggplant Balls

These were terrific. I didn't deep fry these, to save a few calories, I just made them into hamburger sized patties and sauteed them in the frying pan. They were even better the next day, reheated in the toaster oven. Thanks for sharing!

Zucchini Brownies

I cannot believe how GOOD these are!! I have made the recipe a few times already and everyone LOVES it. First of all, don't be worried by the lack of eggs. I was too, but you don't need any eggs in this recipe (honest!) I have also used yellow squash which works equally well. One little thing - I add 1 cup chocolate chips. This serves 2 purposes: firstly, it adds chocolate which is never a bad thing; secondly, it adds a little smooth texture which helps make the zucchini unnoticeable (I didn't add the nuts simply because I don't like them in my brownies). I used whole wheat flour which worked just fine - no one even noticed it wasn't white flour. One thing - don't overbake these or they will have more of a cake like texture instead of brownie. So over all - try it - you will love them!

Classic Apple Pie Filling

So I made this today with great trepidation. (Will it work, will it taste good, will it be worth it?) Conclusion - yes, yes, yes. Even better - it wasn't really a lot of work. I used the leftovers to make an apple crisp and it is GOOD!! I would say this recipe is the standard 'sweetness' of a bakery applie pie, but we don't like things too sweet so on the second batch I reduced the sugar to 2 cups, using Granny Smith apples which are a bit tart. The apples positively shine! I'm definitely going to be using this recipe this fall when the apple crop comes in! Note: if you want to make this in quarts, double the recipe for 7 quarts and process for 25 minutes. It takes about 2 quarts to make one 9" pie.

Cheese-Stuffed Jalapenos

These are so easy and terrific. I used a little less worcestershire sauce (1 ts. instead of 1 1/2 ts.) but that's our taste. I also tried using chorizo instead of bacon - loved it!! Also, I tried other's suggestions and have made then without boiling the jalapenos at all, boiling some for 3 mins and others for 5 mins. - each way they were terrific - just milder the longer they were cooked. I made up a huge batch and then froze the extra for later - they heat up quickly in the oven and taste great. This recipe is really easy to make and is always gone in minutes - thank you for sharing.

Baked Teriyaki Chicken

I have made this a few times now and each time it is all eaten up even though I make extras! It is really easy to make but tastes as if you've spent all day cooking. Definately use foil in your baking pan and then spray the pan foil - your clean-up will be much easier. As others said, I doubled the sauce to have extra for rice. If there is any left over I use it to make fried rice the next day. This recipe is a definately a keeper! Thank you for sharing.

Shepherd's Pie VI

This was incredible. I did double the catsup and added peas as others recommended. And the idea of cooking the carrots with the potatoes was a time saver even though you needed to separate them after they cooked. Everyone loved this - it's a real keeper!!

These were great. I was looking for a recipe for breakfast with peach jam. I made these just the way the recipe stated. It only took me minutes to prepare. Perfect - with a light buttery flavor. I will certainly make these again and will try the cheese for a dinner side-dish. Thanks for sharing this.
