Mardi Gras King Cake

Reviewed: Mar. 8, 2011
A little too sweet for my tastes, the dough was perfect though. Maybe the frosting + the colored sugar was just too much? Kind of tasted like a really sweet cinnamon roll. I used my bread machines dough setting to do the rising and the kneading.

Spicy Cranberry Chutney

Reviewed: Dec. 6, 2010
I made in my bread machine on the jam setting, and tossed in the ginger/lemon etc in when there was 3 minutes remaining and let it do all the work. Excellent!

Samosas

Reviewed: Nov. 12, 2010
I gave four stars because for me, the filling is the best part-- I didn't care for the dough. I used puff pastry dough instead of the recipe dough and baked it. I like to pretend this is healthier than frying it. I have made these as the recipe calls for, and also vegetarian with cubed potatoes, peas, and carrots. I also needed to half the lemon juice for the vegetarian version.

Chicken and Corn Chili

Reviewed: Sep. 30, 2010
It wasn't soupy like I had expected from the photos, but it was still excellent for chips and tortillas.

Chili Colorado

Pretty great. I used cubed goat meat, will probably try cooking in the slow cooker next time. I imagine this would work well with any red meat. It's a keeper!

Paella I

Reviewed: Aug. 13, 2010
I changed it a bit because I was lacking ingredients, I didn't have chorizo sausage, so I used a chorizo sausage recipe and just added the spices. Also I didn't have a red bell pepper so I added 4 roma tomatoes, my boyfriend usually picks out the bell peppers anyways. Other than that I followed to-the-letter, turned out AWESOME!

African Chicken Stew

Awesome, I doubled the spices and ensured that I de-skinned every garbanzo bean. Turned out excellent, my dear boyfriend has now started gushing about my cooking to people! All because of this recipe! :-) 5 Stars!

South African Melktert (Milk Tart)

Reviewed: Aug. 11, 2010
The only recommendation I have is to put something below the tart while it cooks, because mine spilled over the edge mid-way...and man does it suck to clean burnt milk out of a oven! Other than that...it was excellent! Was a little off set by the instructions at first, but I followed them to-the-letter!

Six Can Chicken Tortilla Soup

Reviewed: Jul. 13, 2010
This was a great base recipe! I used regular (non-condensed) chicken broth, replaced one can of broth with cream of chicken soup, browned and cubed regular chicken. Added cumin and spicy curry powder. I also pureed about 2-3 cups of the soup and then let it reduce just a hair so it wasn't super watery. I topped it with fine cubed avocado, and shredded pepper cheese. Great base recipe, and very flexible.

Allrecipes wouldn't be truly have all recipes without this one, and I wouldn't have thought to cook it had I not run across it while in stump as to what to make. Try some variations based upon what is available to you, and what you like in a normal sandwich, always good!

Breakfast Casserole II

Reviewed: Oct. 21, 2008
This was very good. I didn't add as many eggs as it called for, and I didn't have enough potatoes (in fact only almost 1 cup) so I substituted dried potato flakes. Made it thicker of a consistency. I think I would prefer more potato chunks then I had, but I would probably still cut them down to sub some potato flakes for the texture addition.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Oct. 21, 2008
I liked this recipe, however was to sweet for my preference. If you don't prefer overly sweet things, I would recommend cutting the sugar a little bit and then adding up to the amount in the recipe to taste.
