Downeast Maine Pumpkin Bread

This is my 'go-to' recipe for pumpkin bread and it always gets rave reviews! I decrease the fat by using 1/2 C oil and 1/2 C applesauce instead of all the oil. Crunchy topping of brown sugar, flour, cinnamon, oats and melted marjarine sprinkled on top makes it extra yummy.

Simple Scones

Great with the following changes: 1 C white flour and 1 C wheat flour, added 1/2 C chopped dried berries, substituted low-fat sour cream, drizzled with a simple glaze frosting.

Apple Dumpling Cake

I love the simplicity of this dessert; served warm with whipped cream, it was a hit. I did decrease the oil to 1/2 cup and added 1/2 cup applesauce instead. I used 4 large Braeburn apples and tossed the slices with flour, sugar and cinnamon. Adding a little cinnamon to the dry ingredients helped too.

Cranberry-Pumpkin Cookies

Yummy! Cake-like but light. I added 1/2 tsp nutmeg and increased recipe by 1/2 which resulted in 52 cookies. Be sure to grease your cookie sheets!

Caramel Apple Coffee Cake

This was good, but didn't get the rave reviews I expected. I decreased the oil to 1 C. and substituted applesauce for the remaining 1/2 C. oil. I also added 2 tsp cinnamon to the batter. Next time I will make it in a 9x13 for convenience sake, use 3/4 C. oil and 3/4 C. applesauce. I'll also decrease the glaze by 1/2 as it was too much and went all over my serving plate.

To Die For Blueberry Muffins

Made these with fresh blackberries and added a little cinnamon to the batter to spice up the flavor of the muffin. Didn't have time to make the struesel topping so just sprinkled each muffin with coarse sugar before baking. Family loved them, but I prefer a 'cakier' muffin myself.

Smoky Four Cheese Macaroni Bake

Made this for a potluck and it was a hit, easily serving 11 people with leftovers for my husband's lunch the next day. Even though I increased milk and 1/2 & 1/2 to nearly 3 cups total liquid, it still was dryer than expected. I added chopped ham, substituted Dijon for dry mustard (just gave it a big squirt) and increased cheddar as I don't care for swiss. I might make this again if I get a request for it, otherwise I'll try another recipe.

Beet Surprise Cake

Was looking for a way to use the beets in my garden and this sounded like a good way to sneak it past my anti-beet husband and son. They both liked the cupcakes, but others thought they were so-so (nobody knew about the beets). Frosting was runny, even after adding and extra cup of powdered sugar; would use a regular cream cheese frosting recipe next time.

Grandma's Homemade Banana Bread

This is my 'go-to' recipe for banana bread! I make it low-fat by using 1/2 C. butter and 1/2 C. applesauce, and will use any flavor of yogurt instead of the sour milk. I always add a generous dash of cinnamon and a sprinkle of nutmeg. A handfull of craisins adds a nice change of flavor.

Big Soft Ginger Cookies

Disappointed with the results; too thin and soft. Followed the recipe exactly except to substitute OJ for the water. Will stick with my regular molasses/ginger cookie recipe.
