Working full time at the hospital and caring for an organic farm in the Summer doesn't leave much room for kitchen creativity 1/2 of the year.  I love Winter for this reason.  While the produce isn't nearly as ideal as when the CSA is running full tilt, I have more time to spend… MORE

Vegetarian food for my hubby - he loves anything Mexican or Italian. We also make a lot of creative salads.

I make a mean cheese cake. Once made dinner for 50 (hubby's boss and the whole team plus their spouses) Turned out great! Nice to have help with the dishes too. =)
My cooking tragedies
First time making mac and cheese for hubby in 1984, he will not let me forget how the cheese turned out clumpy.

Spaghetti Squash Primavera
Super, basic recipe, but if you're a tweaker here's what I did: ~ cook the squash whole in a pressure cooker 14 mins for small, 18-19 for large. When a knife easily pierces the flesh, it's done. ~ use whatever veg you have on hand, but think crisp tender as the end result ~ add a splash of dry white wine as you saute, maybe a knob of butter ~ toss the strands in at the end ~ use fresh herbs if at all possible, basil and Italian parsley are wonderful ~ finish with parm grated through the pencil eraser sized holes - I like it chunky

Grandmother's Buttermilk Cornbread
Excellent! Like any recipe, you can tweak this one to taste (quit whining about how sweet it is and reduce the sugar . . .) but the base recipe is just right. The end result, if you don't overcook it, is a moist crumb, medium density, delicious corn bread. I served it with sliced avocado, poached eggs and potatoes O'Brien. Comfort food at its best. Next time I'll try adding cheddar and jalapeƱos, maybe some corn kernels. Can't wait to experiment. Thank you, Bethany's grandmom!

Thai Steamed Mussels
Just what the Dr. ordered. Hubby has the flu and this spicy curry made him melt. As written, this is pretty mild. If you like your Thai food hot, add a sliced chili or another tablespoon of curry. I used light coconut milk, half the cilantro and half the mussels for 2. For texture I added rice noodles, shitake mushrooms and edamame. Superduper delicious. Thank you for posting this recipe!!
