Tuna Noodle Casserole from Scratch
I believe that canned cream soups are the root of all evil, so this was a real find. I have made this twice now, once with tuna and once subbing shredded cooked chicken. I skip cooking the noodles beforehand and add 1 cup of chicken stock to the white sauce (it will be runny) and cooking covered with foil in the oven until noodles are done, about 40 minutes. It saves time and a pan. Left out mushrooms, cheese, and used mixed veggies instead. Yum.

Pumpkin Wheat Honey Muffins
Delicious! I used whole wheat pastry flour (it's ground more fine than regular whole wheat flour and is available at Walmart), substituted Craisins for the raisins and threw in a couple of handfuls of quick oats. Cook time was closer to 21 minutes for me. All in all, very good!

David's Yellow Cake
I made the following alterations: Instead of 8 egg yolks I used 4 yolks and 2 whole eggs, subbed regular flour for the cake flour, and subbed buttermilk for the milk. This was a moist cake, not too sweet. Very tasty with buttercream icing. I made cupcakes-do not overfill. Mine spread versus puffing up, still tasty just not as pretty.
