Baked Omelet Roll

Wow! I did a test run of this recipe this morning and I thought it was great. Tomorrow for company I will add extra goodies like sauteed mushroom and onions or diced tomato and avocado, but today I made the recipe as written but used colby jack cheese instead of cheddar. I lowered the oven to 425 and cooked it for 10 minutes. It probably could have cooked for only 8 and been done. I sprayed a glass 9x13 baking dish generously with Pam and it rolled beautifully, cut like a dream, and had an overall unique and neat presentation. My only complaint is that my three year old who eats ANYTHING wasn't so thrilled with this. That said, I really just want to make it for company. It is an interesting crossover between a crepe and eggs. For those who reduce the flour, I think it will lose some of the "crepeness" of it and I could see where it would just taste like eggs and cheese at that point. It is mildly flavored so add spices and fillings to your liking.

Quick Gnocchi

Wow! Thank you so so much for this recipe. We LOVE gnocchi, but had never considered making them at home (only restaurants and the occasional store bought). I was looking for recipes that would freeze well and stumbled upon this one. Excellent! I did take the advice of another reviewer and seasoned with rosemary instead of pepper. The rosemary flavor jumped out beautifully in the finished product. I also added a bit of Romano cheese to the dough. I couldn't taste it so it either needs more or should just be left out. I want to emphasize that my husband is a food snob. He has eaten at some of the finest restaurants in the U.S. He never "LOVES" what I make. It is always "okay" or "fine." A constant critic of gnocchi in restaurants, he loved this one! I could see trying to make it a little lighter in texture, fiddling with flavors, etc, but this is a great base recipe to work with. Vegan Casserole

Let me start by saying we are not a vegan family, in fact, we are not even vegetarian. I decided to try this recipe to pull my husband onto a healthier track and WOW! this is fantastic. The prep took a very long time and I couldn't find miso paste. I added garlic salt to the mashed potato mixture and it was great. I can't say enough about this recipe. The BBQ sauce adds just the right flavor. I will have to remember how long this recipe takes to prepare, but beyond that, I will definitely be making it again.

Fabulous Zucchini Grinders

Absolutely fantastic and so quick and easy. I used just zucchini and it was perfect. My husband modified his by chopping leftover chicken from the night before and following the general recipe after that and he said his was woderful too. I would recommending using more zuchinni. I used 3 medium ones and it really wasn't enough four three let alone for sandwiches. Also, I would put the cheese in the middle of the sandwich as you will loose some to the tinfoil otherwise. Finally, you may want to toast your rolls a little before filling them. We found the inside gets pretty soggy from all the sauce otherwise.

Barbeque Tempeh Sandwiches

Well...I hate to be the sour grape in this bunch, but I just finished eating this for dinner and it was aweful. My husband took one bite and began to scream about the aweful aftertaste. He refused to eat this for dinner and went to get sushi. I didn't taste the aftertaste - for me it was the during taste. Now, there is a reason I gave this two stars instead of one. First, I think I chose a bad BBQ sauce. It is one of our absolute favorites, but was too sweet for this recipe. I highly reccommend going for a smokey sauce for this recipe. Second, we have never had tempeh before and frankly, won't ever again, but if you already know you like tempeh, this may work for you. I really wish I could offer more on how to repair this one, but it was that bad. There have been lots of vegan recipes that I have loved - try Vegan Casserole I, Black Bean Soup, or Vegan Split Pea soup (all from All Recipes and all fabulous).

Sukiyaki

Excellent! This recipe was great. I can't speak to its authenticity, but we loved it. I was quick and easy to prepare too! We made it with cubed chicken breast instead of the beef. The sauce really made this recipe. We may try it with a bit less suger next time, but it was good sweet too. I bought yakisoba noodles at the market, prepared them in a seperate pan and then added them at the end. I can't say enough about this recipe. It is definietly worth a try.

Mom's Authentic Kosher Cholent Recipe

This was good. I have to admit, I am not a huge cholent fan and this recipe didn't convert me. My husband, however, loves cholent and is partial to "athentic" recipes. We lost the last one we ere given so we decided to give this one a shot. My husband loved it! I didn't change a thing in erms of the recipe. It is a solid cholent recipe if you like cholent.

Romantic Chicken with Artichokes and Mushrooms

This is an excellent recipe. To lower the fat I took the reccomendation of another reviewer and only used one small jar (6oz.) of marinated artichokes. I then used a whole can of unmarinated artichokes (14oz). We never would have known the difference. Next time I won't even used the marinated ones. I also added extra capers, which we love. The liquid can be reduced by simmering on medium, rather than low. We put the sauce on our pasta rather than buttering it and it was great!

Thit Bo Xao Dau

The meat was super tough and the whole dish lacked flavor. My husband was very dissapointed with this one as was I. We don't even want to try to bother to docotor this one. My only thought is that if you like really mild food, you might like this.

Chicken and Corn Chili

This recipe was extremely disappointing. I added fresh garlic, bought a great salsa, used black beans (two 16 ounce cans), 3/4 cup chicken broth, and diced tomatoes. I thought I had followed must of the improvement tips of others. I thought this chili was bland and boring at best. No one in my family liked it and there has been a huge fight over who HAS to eat the leftovers. No one wants it. I will go back to making my beef chili recipe from weight watchers which is 300 times better!

Roasted Beets and Sauteed Beet Greens

Becca's Custom Turkey Shepherd's Pie

This was okay, but just barely. The only change I made was that I skipped the pie crust. It was SO dry. It may be better with a little turkey gravy thrown over the top or maybe creamed soup like others suggested. It had a very earthy flavor. My non-picky 4 year old didn't like it. My husband thought it was 'edible', but was in no hurry to take leftovers for lunch the next day. I froze one of the pies for later use and will definitely make gravy when I use it to 'save' it, but will not make this again. In a nut shell, for us it was dry and bland.

Braised Balsamic Chicken

Excellent! Yes, the flavor is strong, so if you like mild or bland, skip this one. The flavor really pops out at you and it is all Balsamic, but if you like Balsamic, you should really enjoy this chicken. And super easy to make too!

Easy Manicotti Florentine

I have to admit that this recipe would have gotten an easy 5 stars from me prior to tonight. However, tonight I made my second pan, which was prepared when I made my first pan a few weeks ago. I had chosen this recipe because it was supposed to freeze well. We loved our first pan which I cooked the same day I made it. Tonight's pan was not so great. The pasta tasted like it had been microwaved. The whole flavor and the way the ingredients blended was quite a disapointment. It was soooo good fresh though that I will definitely make it again, but we won't freeze it. I did add fresh garlic and dried oregano to my filling. Additionally, I really wanted the "florentine" feel so I doubled the spinach. Delicious made fresh!

Potato Leek Soup I

This was really yummy, kind of like baked potato in soup form. We added cheddar cheese and the kids were thrilled. I will say the only problem is that is a really time consuming process to make it and requires quite a few pots and appliances, so it is a lot of clean up for soup.

Baked Salmon II

The kids loved this, but my husband and I didn't care for the combination of flavors much at all and thought it was way too oily. Perhaps our herbs were old and I used dried parsley, but I don't think that even if I used fresh, it would have changed our opinion much. We won't try it again.

Jamie's Cranberry Spinach Salad

Super yummy! I eliminated the poppy seeds and added mandarin oranges as someone had suggested. I used pinenuts instead of almonds. I roasted the in the oven, but didn't use butter. I added pan grilled chicked, which I marinated in the mandarin orange juice, a little salt, and a clove of fresh pressed garlic to make it a complete meal. It was great. Even one of my 4-year olds ate it!

Fudgy Chocolate Fondue

I am famous for screwing up recipes. When I read that this recipe was at risk for being thin, I figured I'd be in trouble. I had read to cook it a little longer and a little hotter, which is exactly what I did and it was perfect. A great Valentines day treat, super easy to make, and really yummy and fudgy. Perfect!

London Broil

This was excellent. We had a 3 pound piece of meat and it took nearly 45 minutes to cook and that was after some very deep scoring and cutting it in half halfway through the cooking process. In the end, my husband closed the grill lid to bake it a bit and that finally did the trick. It was a very late dinner. Overall, the flavor was excellent. We didn't have any tarragon vinegar so I used apple cidar vinegar. It came out just fine. I skipped the MSG and used an herb tenderizer as one of the other reviewers reccomended. My husband loved the flavor, which is surprising because he is a BBQ snob and if he didn't invent it, he generally doesn't like it, but this was a winner.
