I love to cook Mexican food. My family are basically meat & taters kind of people so I don't get to try too many exotic things. I am learning to get really creative with just the basics though.

Nothing too bad has really happened. The worst thing I had happen was a recipe I made in the bread machine kind of over rose and blew up over the edge of the pan and smoked up the house a bit.

Cream Cheese Sugar Cookies
I've used this recipe for years. If I have an orange on hand I like to add a little zest, makes it even yummier and moister.

Fruity Cookie Press Cookies
I remember my Mom making these cookies when I was growing up. I made the mistake of following some of the other reviewers suggestions and they turned out crappy. The second time I made these I followed the recipe (I used butter instead of margarine)and they turned out perfect. I did bake them at 400 and I took them out at 6 minutes and they were perfect doneness.

Peanut Butter Pie
This pie is fantastic!! My family requests I make it often. It is soooo easy also. The only change I made was I put the peanut butter cups in the freezer while preparing the pie and then I chopped them up in a food processor to make crumbs and sprinkled them over the top (I used only 6 for this). It is a rich dessert but awesome with a glass of milk.
