Slow Cooker Carnitas

I had pork loin rather than shoulder, and did not shred the pork. The slices were tender and well flavored. As other reviewers suggested, I tripled spices (except the cinnamon). It was too salty but otherwise tasted great. Just don't triple the salt or cinnamon. Also suggest adding 1/4 tsp cayenne pepper or some chili powder for a little heat.

Fish Fillets Italiano

This recipe really rates 4 1/2 stars. It's easy, delicious, and inexpensive. In the midwest, cod is relatively easy to find as a fresh fish in the grocery. This is a satisfying, no-brainer meal, fast to prepare on a week night.

Jamaican Jerk Dry Rub

This is very good, but it really doesn't taste like jerk chicken you get in Jamaica to me. Very good though and a different dry rub with the clove and cinnamon taste.

Grilled Chicken with Herbs

This was a great hit at my BBQ party. I marinated it for 8 hours and used fresh basil in place of sage--that's what I had on hand. The vinegar wasn't overwhelming, but produced a very tender, moist breast. The herbs were such a nice blend and the parsley really enhanced the flavor. Good thing because boneless breast is usually so darned dry and tasteless. Loved it!

Cajun Baked Catfish

The family really enjoyed this. I used less cayenne and hot sauce, and subbed garlic powder for garlic salt (based on previous reviews). Then I sprinkled a little salt on the fish--very little though. Great flavor, better for you than frying.

G's Flank Steak Marinade

Easiest Pot Roast Ever

I think this is too bland, but with the addition of some spices: bay leaf, garlic, and a little cayenne, it's much improved. I suggest thickening the gravy with flour or cornstarch.

White Bean Chicken Chili

I love this recipe! I added black olives, and used 1 can of diced tomatoes with green chilis iinstead of the tomatillos) along with 1 can of plain diced tomatoes. Even better the 2nd day!

Cranberry Martini

This tastes like cherry cough syrup. I kept adding cranberry juice, but it just didn't help. I used triple sec for the orange liqueur. Maybe that was the problem??

Classic Spanish Sangria

I added apples, strawberries, and pineapple. Doubled the recipe, but used 1/2 the rum (Capt Morgan spiced rum)called for. SO GOOD, we drank every last drop!

Glazed Meatloaf I

This was a big hit with hubby and our friends. I used bread crumbs and added garlic powder and fresh ground pepper. We like onion a lot, so I used more of that. I also made more of the ketchup topping. Thanks for this great recipe!

Solid recipe, but I think it's better if you use a lot more onion than called for. I increased the onion to 1/3 cup for every 2 cups of potatoes.
