Goat Cheese, Tomato, and Pesto Dip

Reviewed: Jun. 22, 2014
When tomatoes are not in season, I recommend using sundried tomatoes along with some grape/cherry tomatoes. Great recipe! Crowd pleaser!

Roasted Carrot and Cauliflower Curried Soup

Reviewed: Apr. 26, 2014
Delicious, healthy soup with interesting flavor profile. I added onion also. It's not quite 5 stars, but 4 1/2 for sure!

Baked Denver Omelet

Reviewed: Mar. 29, 2014
This is excellent and my husband's favorite of all the breakfast casseroles I've tried from Allrecipes. I like adding a little fresh basil chopped. I needed to have 6 servings so used 12 eggs and put the mixture into a 7" by 11" rectangular pan. It was done in about 20 minutes so keep your eye on the pan so it doesn't overcook and dry out.

Simple Baked Apples

Reviewed: Jan. 3, 2014
I've tried this 2 ways--crockpot and oven. I overcooked it in the crockpot--watch out for mushy apples/applesauce! Used Granny Smith apples for the tartness. This is a lovely dish for cooler temps. I like the addition of vanilla and about 1-2 Tbsp of butter. I used pumpkin pie spice--thanks for a great recipe!

It doesn't knock my socks off. Good--not great.

Angel Hair Pasta with Shrimp and Basil

Reviewed: Oct. 13, 2013
After reading the reviews, I made the following adjustments: 4 cloves of garlic, 1 Tb fresh oregano, thyme, 1/4 cup basil, 1/2 tsp salt, 1/4 tsp fresh ground pepper, sauteed in oil with 28 ounces of diced Italian seasoned tomatoes. Add a dash of sugar. Simmer for 15-20 minutes, adjusting spices as needed. I like a little red pepper flakes. Then add the raw shrimp, cover, and simmer until shrimp is done, about 5 to 6 minutes, stirring frequently. Very good over pasta.

Gyros Burgers

Wow--this is so darned good. Everyone raved, and they really do have a taste similar to a gyro. Try it...you'll like it!

Whiskey Marinade

Reviewed: Jul. 6, 2012
I was looking for a recipe comparable to the TGIF sauce. This isn't quite it, but it's good. I'm not sure what it's missing, but didn't seem to have the full flavor of the TGIF sauce. Tasty though.

Savory Grilled Potatoes

Reviewed: Jul. 6, 2012
These were popular with my guests and husband, but I thought they were overly fatty. I don't think I'm a fan of mayo with potato, but it's a nice dish to serve for company at a cookout.

Spinach Basil Pesto

Reviewed: Jul. 6, 2012
What a brilliant recipe! I didn't think the spinach would enhance the basil, but it really does. Excellent, and no ingredients need to be altered!

Grilled Lemon Yogurt Chicken

Reviewed: Jul. 6, 2012
This is delicious! I used one reviewer's suggestion for a harissa substitute, and the sauce was excellent too. It's nice to have a different chicken recipe with some zing and a sauce on the side!

Balsamic Roasted Pork Loin

Reviewed: Jul. 4, 2012
This is a very good recipe. I can't give it 5 stars though as I felt it was somewhat bland. To turn it up a notch, I added fresh herbs I had to the marinade: garlic, basil, parsley, oregano, and thyme. Then also decreased the oil and vinegar to 1/3 cup. Be careful not to overbake it or it becomes dry.

Shoyu Chicken

Reviewed: Jun. 14, 2012
This was okay, but seemed to stop shy of being "wow." I'm not sure what it needed--the flavor profile was just average.

Rigatoni with Eggplant, Mushrooms and Goat Cheese

Reviewed: May 22, 2012
I loved the flavors, but cut back on the goat cheese. I added fresh basil and oregano. Also used less pasta to keep carbs and calories down. With those changes, it was very tasty.

Szechwan Shrimp

Reviewed: Nov. 21, 2011
Delicious, easy, healthy! I'm a fan. Thank you for the recipe. We made baby bok choy along with it, and it was awesome. Next time I'll try using real ginger, but it was fine with the ground.

Green Beans with Almonds and Caramelized Shallots

Delicious and a great side dish for company. I suggest using 1 T sugar instead of 2, 2 T butter instead of 3. Other than that, perfect!

Spicy Rapid Roast Chicken

Reviewed: Apr. 2, 2011
This is kind of blah. Not bad, but not great. If the seasonings were kicked up a notch, I'd give it more stars. The cooking method is very good though, hence 3 stars.

Slow Cooker Carnitas

Reviewed: Nov. 22, 2010
I had pork loin rather than shoulder, and did not shred the pork. The slices were tender and well flavored. As other reviewers suggested, I tripled spices (except the cinnamon). It was too salty but otherwise tasted great. Just don't triple the salt or cinnamon. Also suggest adding 1/4 tsp cayenne pepper or some chili powder for a little heat.

Fish Fillets Italiano

Reviewed: Nov. 22, 2010
This recipe really rates 4 1/2 stars. It's easy, delicious, and inexpensive. In the midwest, cod is relatively easy to find as a fresh fish in the grocery. This is a satisfying, no-brainer meal, fast to prepare on a week night.

Jamaican Jerk Dry Rub

Reviewed: Aug. 6, 2010
This is very good, but it really doesn't taste like jerk chicken you get in Jamaica to me. Very good though and a different dry rub with the clove and cinnamon taste.
