Salmon Rosemary Burgers

I love this recipe, and advise cutting back on the bread crumbs. If you use 1/2 cup instead of 1 cup, it tastes more like a burger vs. a salmon pattie. But either way, it's excellent!

When tomatoes are not in season, I recommend using sundried tomatoes along with some grape/cherry tomatoes. Great recipe! Crowd pleaser!

Baked Denver Omelet

This is excellent and my husband's favorite of all the breakfast casseroles I've tried from Allrecipes. I like adding a little fresh basil chopped. I needed to have 6 servings so used 12 eggs and put the mixture into a 7" by 11" rectangular pan. It was done in about 20 minutes so keep your eye on the pan so it doesn't overcook and dry out.

Simple Baked Apples

I've tried this 2 ways--crockpot and oven. I overcooked it in the crockpot--watch out for mushy apples/applesauce! Used Granny Smith apples for the tartness. This is a lovely dish for cooler temps. I like the addition of vanilla and about 1-2 Tbsp of butter. I used pumpkin pie spice--thanks for a great recipe!

Angel Hair Pasta with Shrimp and Basil

After reading the reviews, I made the following adjustments: 4 cloves of garlic, 1 Tb fresh oregano, thyme, 1/4 cup basil, 1/2 tsp salt, 1/4 tsp fresh ground pepper, sauteed in oil with 28 ounces of diced Italian seasoned tomatoes. Add a dash of sugar. Simmer for 15-20 minutes, adjusting spices as needed. I like a little red pepper flakes. Then add the raw shrimp, cover, and simmer until shrimp is done, about 5 to 6 minutes, stirring frequently. Very good over pasta.

I was looking for a recipe comparable to the TGIF sauce. This isn't quite it, but it's good. I'm not sure what it's missing, but didn't seem to have the full flavor of the TGIF sauce. Tasty though.

This is delicious! I used one reviewer's suggestion for a harissa substitute, and the sauce was excellent too. It's nice to have a different chicken recipe with some zing and a sauce on the side!

Balsamic Roasted Pork Loin

This is a very good recipe. I can't give it 5 stars though as I felt it was somewhat bland. To turn it up a notch, I added fresh herbs I had to the marinade: garlic, basil, parsley, oregano, and thyme. Then also decreased the oil and vinegar to 1/3 cup. Be careful not to overbake it or it becomes dry.

Rigatoni with Eggplant, Mushrooms and Goat Cheese

I loved the flavors, but cut back on the goat cheese. I added fresh basil and oregano. Also used less pasta to keep carbs and calories down. With those changes, it was very tasty.
