Chicken Enchiladas II
This was amazing! My husband called me at work to tell me it was the best lunch he had ever had...and I cook him lunch every day. This will become a staple in my arsenal. Most importantly, it was SO easy. The only tweak was to cook the chicken with low fat/sodium broth on low for 4hrs in a crock pot. It made the shredding of the chicken a snap. Love this recipe!

Day Before Mashed Potatoes
Awesome, was asked numerous times for the recipe by guests at my first holiday dinner. I placed the mixture in a large crockpot for overnight storage. Added chopped green onions. Used more onion powder, sour cream and cream cheese then was called for, but it worked. 1-1/2 bags of yellow potatos. Perfect!

Easy Herb Roasted Turkey
I was told by some very discriminating eaters that this was the best turkey they had ever had - and it was my very first! I had a 23lb bird and this did the trick. Some ingredients were increased to account for the size of the turkey. Inserting the mixture below the skin was the key! Thanks Lisa for such a great recipe.
